{"id":18157,"date":"2014-02-28T00:45:10","date_gmt":"2014-02-28T05:45:10","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=18157"},"modified":"2014-02-27T23:09:19","modified_gmt":"2014-02-28T04:09:19","slug":"mondo-coconut-shrimp","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/02\/28\/mondo-coconut-shrimp\/","title":{"rendered":"Mondo Coconut Shrimp"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/Mondo-Coconut-Shrimp-Resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"Mondo Coconut Shrimp Resize\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/Mondo-Coconut-Shrimp-Resize-1024x767.jpg\" width=\"502\" height=\"376\" \/><\/a><\/p>\n<p>Yes, MONDO! \u00a0With four, count &#8217;em, FOUR different coconut products, you too can make your favorite appetizer from that restaurant you go to with your girlfriends! <strong>\u00a0Mondo Coconut Shrimp<\/strong> are really quite easy to make, and, a fun and tasty appetizer for a party.<\/p>\n<p>You&#8217;ll want to use BIG shrimp for this recipe&#8212;the larger the better. \u00a0I found \u00a0some 13-15 count shrimp on sale, and they worked really well. \u00a0If you are using smaller shrimp, decrease your cooking time so you don&#8217;t make these guys all tough and rubbery. \u00a0I coated these in both sweetened AND unsweetened coconut. \u00a0Feel free to use one or the other if you don&#8217;t have both. \u00a0I was going to make this recipe just with the unsweetened kind, but I found a cup of sweetened coconut in my freezer and decided to use it up &#8211; and I&#8217;m glad I did!<\/p>\n<p>To be \u00a0honest, these are fantastic with just some salt sprinkled on top when they come off\u00a0the stove. \u00a0I took a photo of them with a lemon slice, and found out they didn&#8217;t even need that to be delicious! \u00a0So make these for friends, or as part of a funky dinner, and go MONDO!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>MONDO Coconut Shrimp<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 pound large shrimp, shelled and deveined<\/li>\n<li>3 eggs<\/li>\n<li>1 cup coconut flour<\/li>\n<li>1 cup sweetened shredded coconut<\/li>\n<li>1 cup unsweetened shredded coconut<\/li>\n<li>1 teaspoon curry powder<\/li>\n<li>coconut oil, for frying<\/li>\n<li>salt for serving<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Set up a breading station. \u00a0In the first bowl, beat the 3 eggs with a tablespoon of water. \u00a0In the second bowl, pour in the coconut flour. \u00a0In the third bowl, mix together the two coconut shreds and the curry powder.<\/li>\n<li>Start breading: \u00a0Dip a shrimp into the egg, then the coconut flour, then back into the egg, and then the coconut shreds. \u00a0Place on a plate while you complete the breading.<\/li>\n<li>In a large non-stick frying pan, heat one heaping teaspoon of coconut oil over medium heat. \u00a0When \u00a0hot, carefully add the breaded shrimp. \u00a0You&#8217;ll probably have to do this in at least two batches. \u00a0Let them cook for about six minutes, then flip and cook again for another five minutes. \u00a0Watch your heat here &#8211; you want it medium to medium-low, so that the shrimp cooks evenly and the breading doesn&#8217;t burn before the shrimp are done.<\/li>\n<li>Remove cooked shrimp to a plate and immediately sprinkle with kosher or sea salt. \u00a0Add another teaspoon of coconut oil \u00a0to the pan, if necessary, and cook the next batch. \u00a0Serve hot!<\/li>\n<\/ol>\n<p>I texted my husband a photo of the shrimp and he said, &#8220;Oooh, looks yummy!&#8221; so I saved him some. \u00a0Unfortunately, they aren&#8217;t as nice the second time around. \u00a0They still taste great, but you can&#8217;t get them crispy on the outside a second time. \u00a0That means Carpe Diem &#8211; Gather ye rosebuds while ye may &#8211; and eat your shrimp while they&#8217;re hot.<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yes, MONDO! \u00a0With four, count &#8217;em, FOUR different coconut products, you too can make your favorite appetizer from that restaurant you go to with your girlfriends! \u00a0Mondo Coconut Shrimp are really quite easy to make, and, a fun and tasty appetizer for a party.
