\u00a0I just love this product and try to always have some stored in the freezer. \u00a0(Hint: if you keep it frozen, it is super easy to grate up to put into your recipe.) \u00a0It is a great ingredient to add to many spicy dishes. \u00a0We especially enjoy it in Thai food! \u00a0Try adding a bit to any baked goodies that have cinnamon, or nutmeg, in them. \u00a0I buy mine in the grocery store; look for it either in the Asian food aisle, or the baking goods aisle.<\/p>\n<p>Oh&#8230;just \u00a0a suggestion: \u00a0perhaps you might want to make a double batch! \u00a0Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1556.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-17546\" alt=\"IMG_1556\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1556-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1556-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1556.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3 style=\"text-align: center;\"><span style=\"color: #008000;\">Zucchini Muffins<\/span><\/h3>\n<h4 style=\"text-align: center;\">makes one dozen regular-sized muffins<\/h4>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<\/p>\n<p><span style=\"text-decoration: underline;\"><em>topping ingredients<\/em><\/span>:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1553.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-17545\" alt=\"IMG_1553\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1553-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1553-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/02\/IMG_1553.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1\/4 cup chopped almonds<br \/>\n1 tablespoon sugar (I use coconut sugar)<br \/>\n1 teaspoon cinnamon<br \/>\n2 tablespoons almond flour<br \/>\n2 tablespoons very cold butter, cut into little cubes<\/p>\n<p><span style=\"text-decoration: underline;\"><em>muffin ingredients<\/em><\/span>:<br \/>\n1\/2 cup sugar (I use coconut sugar)<br \/>\n3 eggs<br \/>\n3\/4 cup greek yogurt<br \/>\n1\/4 cup softened coconut oil<br \/>\n1+1\/2 cup shredded zucchini, squeezed dry in a dish towel<br \/>\n1 teaspoon cinnamon<br \/>\n1\/8 teaspoon powdered ginger<br \/>\n1 cube frozen crystallized ginger*, grated fine<br \/>\n1\/4 teaspoon nutmeg<br \/>\n1+1\/2 cup almond flour<br \/>\n1\/2 cup coconut flour<br \/>\n1 teaspoon baking powder<\/p>\n<ul>\n<li>Heat oven to 325<\/li>\n<li>Place muffin cups in muffin tin<\/li>\n<li>Make topping ingredients first: mix all dry components of topping together; then drop in the butter cubes and quickly use your fingertips to incorporate the butter; set aside<\/li>\n<li>In a medium-sized bowl, whisk together first 4 muffin ingredients until sugar is dissolved<\/li>\n<li>Add zucchini (and crystallized ginger, if using) to the wet ingredients; stir well<\/li>\n<li>In a separate large bowl, mix together the flours, spices, and baking soda<\/li>\n<li>Add wet ingredients to the dry, mixing until incorporated<\/li>\n<li>Divide batter into muffin cups evenly<\/li>\n<li>Sprinkle on almond topping<\/li>\n<li>Bake for 30- 35 minutes<\/li>\n<li>After removing from oven, let cool for just a minute \u00a0and then remove to a cooling rack<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Here on our At Home with GCH blog, Monday\u2019s are always focused on healthy but oh-so-yummy! recipes. \u00a0This recipe fits perfectly into the category being it is low in fat (uses greek yogurt and a small amount of coconut oil or butter), is gluten-free, grain-free, and more than one cup of vegetables.
