{"id":17018,"date":"2014-01-17T01:01:28","date_gmt":"2014-01-17T06:01:28","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=17018"},"modified":"2014-01-16T22:38:41","modified_gmt":"2014-01-17T03:38:41","slug":"spinach-salad-warm-bacon-dressing","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/01\/17\/spinach-salad-warm-bacon-dressing\/","title":{"rendered":"Spinach Salad with Warm Bacon Dressing"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Spinach-Salad-with-Warm-Bacon-Dressing-Resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-17034\" alt=\"Spinach Salad with Warm Bacon Dressing Resize\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Spinach-Salad-with-Warm-Bacon-Dressing-Resize.jpg\" width=\"448\" height=\"597\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Spinach-Salad-with-Warm-Bacon-Dressing-Resize.jpg 746w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Spinach-Salad-with-Warm-Bacon-Dressing-Resize-224x300.jpg 224w\" sizes=\"auto, (max-width: 448px) 100vw, 448px\" \/><\/a><\/p>\n<p>Continuing with the theme of <em>National Soup Month<\/em>, I have another salad to pair with a lovely, hot bowl of soup. \u00a0With crunchy bacon, creamy hardboiled eggs, and a sweet-and-sour vinaigrette, this recipe for <strong>Spinach Salad with Warm Bacon Dressing<\/strong> is perfect for a cold day.<\/p>\n<p>To make sure you get lovely hardboiled eggs (and not greenish, sulfury yolks), go easy on your eggs. \u00a0Put them in a pot of water that covers the eggs by an inch. \u00a0Bring to a boil &#8211; and as soon as it boils, take it off the stove, put a lid on the pot, and set a timer for 14 minutes. \u00a0When the timer rings, drain off the hot water and cover with ice and cold water. \u00a0Let the eggs cool, then peel.<\/p>\n<p>I used rice vinegar; but you can try red or white wine vinegar, or apple cider vinegar. \u00a0This recipe makes two large salads. \u00a0Try it with soup, stew, chili, or just some bread and butter.<\/p>\n<p><strong>Spinach Salad with Warm Bacon Dressing<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 large bunch very fresh spinach (or a bag of baby spinach) rinsed very well and spun dry<\/li>\n<li>6 slices bacon<\/li>\n<li>2 tablespoons rice vinegar (or other vinegar)<\/li>\n<li>1 tablespoon (or more, if you like) honey<\/li>\n<li>1 tablespoon Dijon mustard<\/li>\n<li>1\/2 onion, sliced, or diced, very thin<\/li>\n<li>4 hardboiled eggs<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Wash and dry the spinach very well. \u00a0(Gritty sandy spinach is horrible!) \u00a0Divide into two large bowls and set aside.<\/li>\n<li>Fry the bacon in a large pan until crispy. \u00a0Remove to a paper towel-lined plate to cool. \u00a0Measure out 1\/4 cup of the bacon fat, discard any leftover, and return the 1\/4 cup of fat to the pan.<\/li>\n<li>Heat the bacon fat, and with a wooden spoon or silicon spatula, stir in the vinegar, mustard, and honey. \u00a0Add the onion and cook until the onion begins to soften, about 5 minutes.<\/li>\n<li>Peel and quarter the eggs and divide between the two salad bowls. \u00a0Crumble the bacon and add to the spinach. \u00a0Pour the hot dressing over the spinach and toss. \u00a0Season with fresh cracked pepper, if desired, and serve warm.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p style=\"text-align: center;\">To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Continuing with the theme of National Soup Month, I have another salad to pair with a lovely, hot bowl of soup. \u00a0With crunchy bacon, creamy hardboiled eggs, and a sweet-and-sour vinaigrette, this recipe for Spinach Salad with Warm Bacon Dressing is perfect for a cold day.
