{"id":16800,"date":"2014-01-10T01:01:01","date_gmt":"2014-01-10T06:01:01","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=16800"},"modified":"2014-01-09T23:48:50","modified_gmt":"2014-01-10T04:48:50","slug":"chinese-chicken-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2014\/01\/10\/chinese-chicken-salad\/","title":{"rendered":"Chinese Chicken Salad"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Chinese-Chicken-Salad-Resize.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-16803\" alt=\"Chinese Chicken Salad Resize\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Chinese-Chicken-Salad-Resize.jpg\" width=\"539\" height=\"404\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Chinese-Chicken-Salad-Resize.jpg 899w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/Chinese-Chicken-Salad-Resize-300x224.jpg 300w\" sizes=\"auto, (max-width: 539px) 100vw, 539px\" \/><\/a><\/p>\n<p>As Coleen pointed out in her post on Monday, this is National Soup Month! \u00a0She will be sharing some of her favorite soups with us. \u00a0And what makes a better meal than soup and salad? \u00a0 One of my favorite salads is <strong>Chinese Chicken Salad<\/strong>!<\/p>\n<p>This is perfect for winter, because all of the ingredients are in season now. \u00a0Instead of canned mandarin oranges, you can probably find fresh ones now &#8211; I&#8217;ve got Clementines and Satsumas left and right at my grocery store. \u00a0Red cabbage and carrots are always around, as are green onions. \u00a0For the base, I used Napa cabbage, but if you don&#8217;t have that, you can use any kind of lettuce you like, or really finely chopped green cabbage. \u00a0I cooked some extra chicken breasts last night so I could chop them up cold and throw them over the salad, but you can use whatever chicken you like &#8211; roasted, store-bought rotisserie, or even breaded chicken nuggets!<\/p>\n<p>This recipe serves two as part of a lunch or dinner menu. \u00a0Try this salad with any soup you like, or paired up with a sandwich, wrap, or pasta dish. \u00a0Filling, nutritious and delicious &#8211; and it won&#8217;t break any of your New Year&#8217;s resolutions!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Chinese Chicken Salad<\/strong><\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 small head Napa cabbage, or romaine lettuce<\/li>\n<li>1\/2 head small red cabbage<\/li>\n<li>2 carrots<\/li>\n<li>2 or 3 green onions<\/li>\n<li>2 mandarin oranges<\/li>\n<li>2 cooked chicken breasts, or 3 cups chopped cooked chicken<\/li>\n<li>2 tablespoons sesame oil<\/li>\n<li>2 tablespoons rice vinegar<\/li>\n<li>1 tablespoon sesame seeds<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Chop the Napa cabbage into inch-wide strips. \u00a0Finely slice the red cabbage. \u00a0Place both in a salad spinner and rinse under cold water, then spin dry.<\/li>\n<li>Cut the carrots into matchsticks. \u00a0Finely slice the green onions. \u00a0Peel the oranges and remove as much of the white pith as possible. \u00a0Separate into segments. \u00a0Dice or thinly slice the chicken breasts.<\/li>\n<li>To assemble: \u00a0In two very large bowls, mix together the cabbages, carrots, and onions. \u00a0Arrange the oranges and chicken breasts on top. \u00a0Drizzle each salad with one tablespoon each of sesame oil and rice vinegar, and sprinkle the sesame seeds, salt, and pepper on top.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As Coleen pointed out in her post on Monday, this is National Soup Month! \u00a0She will be sharing some of her favorite soups with us. \u00a0And what makes a better meal than soup and salad? \u00a0 One of my favorite salads is Chinese Chicken Salad!
