January is <em>National Soup Month<\/em>, and for my hubby, Robert, we have entered his \u2018happy zone!&#8217; \u00a0The man will eat soup every single day! So, just like January 2013, I am indulging him and have committed to serving soup at one meal per day for the entire month.<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-16.54.40.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-16726\" alt=\"2014-01-05 16.54.40\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-16.54.40-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-16.54.40-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-16.54.40.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Here on our <em>healthy but oh-so-yummy<\/em>! Monday&#8217;s on the <strong>At Home w\/ GCH<\/strong> blog, we will be promoting soup, <em>soup<\/em>, and <strong><em>soup<\/em> <\/strong>for the next four weeks. Each week will focus on a different type of soup, i.e., veggie-based, creamy, chunky, meaty, etc. And don\u2019t forget to utilize the <strong>search button on our website<\/strong> to check out soups from <span style=\"color: #333399;\">SoupPalooza 2013<\/span> along with soups that our Dana has shared with us, too! \u00a0With all of the ch-ch-chilly temperatures around the country recently, perhaps soup will feature more in your menu planning, too!<\/p>\n<h3><span style=\"color: #333399;\">Turkey Veggie Soup<\/span><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span> <\/strong><br \/>\n4 quarts homemade turkey stock (or your choice of boxed broth)<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-14.09.29.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-16725\" alt=\"2014-01-05 14.09.29\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-14.09.29-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-14.09.29-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2014\/01\/2014-01-05-14.09.29.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n3-4 cups of cooked turkey meat, shredded<br \/>\n1 small sweet onion, finely diced<br \/>\n1 stalk celery, thinly sliced<br \/>\n2 tablespoons chopped garlic in oil (jarred)<br \/>\n2 tablespoon olive oil<br \/>\n1\/2 medium-large butternut squash, peeled and cubed<br \/>\n1 can (15 oz) stewed or crushed tomatoes<br \/>\n1\/2 can (15 oz) pumpkin puree (NOT seasoned!)<br \/>\n3 tablespoons chopped parsley<br \/>\n1 tablespoon chopped thyme<br \/>\n1 tablespoon chopped rosemary<br \/>\n2 garlic cloves (crushed)<br \/>\nsalt and pepper to taste<br \/>\n6-8 ounces green beans (if using frozen, defrost)<br \/>\n2 cups cauliflower florets (ditto)<br \/>\n1 cup cubed zucchini<br \/>\n8 ounces carrots (I used frozen)<br \/>\noptional: cooked rice, quinoa, or tiny pasta<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span><\/p>\n<ul>\n<li>In a large soup (or stock) pot, heat olive oil over medium-high heat, and then add onion and celery. Saute for 5 minutes.<\/li>\n<li>Add cubed butternut squash and saute for an additional 10 minutes, stirring only once or twice, \u2018til just beginning to brown.<\/li>\n<li>Add chopped garlic and saute for 1 minute, stirring constantly.<\/li>\n<li>Stir in stock, tomatoes, and pumpkin puree, mixing thoroughly.<\/li>\n<li>Add vegetables (zucchini, cauliflower, carrots, and green beans) and seasonings. Bring to a boil.<\/li>\n<li>Reduce heat, cover, and simmer for 15 or so minutes \u2018til veggies are getting tender.<\/li>\n<li>Using a slotted spoon, remove about half of the veggies to a bowl and set aside.<\/li>\n<li>Turn heat very low, and puree the broth and remaining veggies \u2018til smooth using an immersion stick blender (or <strong><span style=\"text-decoration: underline;\">very\u00a0<\/span><em>carefully!<\/em> <\/strong>puree in a blender container).<\/li>\n<li>Add back in the reserved veggies along with the cooked meat.
