{"id":16615,"date":"2013-12-30T01:01:44","date_gmt":"2013-12-30T06:01:44","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=16615"},"modified":"2013-12-29T21:26:23","modified_gmt":"2013-12-30T02:26:23","slug":"shepherds-pie-cauliflower-mash","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/12\/30\/shepherds-pie-cauliflower-mash\/","title":{"rendered":"Shepherds Pie with Cauliflower Mash"},"content":{"rendered":"<p>Oh, so yummy! \u00a0My husband\u00a0<em><strong>loves<\/strong><\/em>\u00a0Shepherd\u2019s Pie\u2014and so I indulge him! \u00a0 We&#8217;ve had Shepherd&#8217;s Pie with beef filling, chicken filling, turkey filling, vegetable filling. \u00a0We&#8217;ve had it topped with traditional mashed potatoes, with mashed sweet potatoes, with mashed turnips, and like this&#8212;our favorite way&#8212;with mashed cauliflower! \u00a0I always have my eye out for new\u00a0variations! \u00a0This recipe fits into our\u00a0<em>healthy but oh-so-yummy<\/em>\u00a0category in a couple of ways:<\/p>\n<ul>\n<li>it is low-carb (with the absence of potatoes)<\/li>\n<li>it\u00a0 is made with natural ingredients that you can pronounce (as the gravy is made from scratch), and not a can of cream of something or other<\/li>\n<li>it is low in fat\/high in protein (using boneless chicken breast as the protein and just 1\/3 cup of shredded cheese and 1\/3 cup Parmesan)<\/li>\n<\/ul>\n<p>This recipe could easily be doubled and baked in an 11 x 13 baking dish. \u00a0Enjoy!<\/p>\n<h3><span style=\"color: #993366;\">Shepherds Pie with Mashed Cauliflower Topping\u00a0<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/shepherdspie.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-16617\" alt=\"shepherdspie\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/shepherdspie-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/shepherdspie-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/shepherdspie.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Filling Ingredients<\/span>:<\/strong><\/p>\n<p>1 sweet onion, chopped in pieces about 1\/2 inch dice<br \/>\n4-6 ounces baby bella mushrooms, wiped clean and sliced chunky<br \/>\n2-3 tablespoons chopped garlic in oil (from a jar)<br \/>\n4+ teaspoons olive oil<br \/>\n1# boneless chicken breast, pounded flat, cut into 1\u2033 cubes<\/p>\n<p>1 tablespoon butter, or coconut oil<br \/>\n2 tablespoons brown rice flour (or all-purpose flour)<br \/>\n1\/4 cup white wine (or broth)<br \/>\n1+1\/4 cups chicken broth<\/p>\n<p>1 bag frozen mixed vegetables (your choice), <em>defrosted<\/em><\/p>\n<p><b><span style=\"text-decoration: underline;\">Topping Ingredients<\/span>:<\/b><\/p>\n<p>1 medium-sized head of cauliflower, cored and chopped into small pieces<br \/>\n1\/4 cup milk<br \/>\n1\/3 cup finely grated parmesan cheese<br \/>\nsalt and freshly ground black pepper to taste<\/p>\n<p>1\/3 cup shredded cheese (sharp cheddar, smoked gouda) *use a flavorful cheese<\/p>\n<p><b><span style=\"text-decoration: underline;\">Instructions<\/span>:<\/b><\/p>\n<ul>\n<li>Preheat oven to 375.<\/li>\n<li>Bring a medium-sized pot of salted water to a boil. Add cauliflower and simmer \u2018til\u00a0 soft enough to mash easily (10-12 minutes).<\/li>\n<li>Drain cauliflower <strong>very well<\/strong>; place back into pot and \u00a0\u201cmash\u201d the cauliflower along with the milk and Parmesan.<\/li>\n<li>Season very well with salt and pepper to taste.<\/li>\n<li>While the cauliflower cooks, heat 2 teaspoons of olive oil in a large frying pan and saute the cut-up chicken. \u00a0Cook\u00a0\u2019til just getting brown but don\u2019t overcook.<\/li>\n<li>Reduce heat to low, and add the chopped garlic for the last minute (don\u2019t let\u00a0the\u00a0garlic burn). \u00a0Remove pan from stove; set aside cooked chicken.<\/li>\n<li>Wipe pan with paper towels to remove bits.<\/li>\n<li>Then add 2 additional teaspoons olive oil; and saute chopped onions for 3 minutes.\u00a0 Add chopped mushrooms and saute for 4-5 minutes more to caramelize.<\/li>\n<li>Reduce heat to low; add 1 tablespoon butter, and sprinkle flour over the mushroom-onion mixture, stirring with a whisk or wooden spoon.<\/li>\n<li>&#8216;Cook&#8217; this mixture for 3 minutes (to reduce the flour-y taste) occasionally scraping the pan.<\/li>\n<li>Then gradually whisk in the wine \u2019til the mixture is smooth.<\/li>\n<li>Slowly whisk in the\u00a0 broth and your gravy will come together.\u00a0 Gently simmer for 5 minutes.<\/li>\n<li>Add back the cooked chicken and the defrosted veggies and heat together for 1-2 minutes.<\/li>\n<li>Spread the chicken-vegetable-gravy mixture in the bottom of a 8 cup casserole dish.<\/li>\n<li>Top with the cauliflower mixture, and spread across the pan almost to the edges.<\/li>\n<li>Bake for 20 minutes, and then top with the shredded cheese.<\/li>\n<li>Continuing baking another 10 minutes or so \u2019til bubbly. \u00a0(If top is not lightly browned, can be carefully placed under broiler for 2-3 minutes.) \u00a0Enjoy!<\/li>\n<\/ul>\n<p style=\"text-align: center;\">\u00a0 \u00a0<span style=\"color: #993366;\">\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665 \u00a0\u00a0\u00a0 \u00a0\u2665\u00a0<\/span><\/p>\n<p>God loves you!\u00a0\u00a0\u00a0<span style=\"color: #993366;\">\u2665<\/span> \u00a0(Don\u2019t ever forget that!)<\/p>\n<p><span style=\"color: #993366;\">\u2665\u00a0<\/span> coleen<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Oh, so yummy!
