and yours too, I&#8217;m sure. \u00a0My Dad<em> lives<\/em> for Tollhouse chocolate chip cookies. \u00a0My favorites are peanut butter, with or without jam thumbprints and crushed walnuts. \u00a0When I worked outside the home, I made dozens of cookies each year for Christmas, sharing them with co-workers and other friends and family. \u00a0Now that I am home with my girls, I have to be much more careful &#8211; I can&#8217;t have all those cookies around, since I don&#8217;t have anywhere reliable to offload them, and I DON&#8217;T want to eat them all myself! \u00a0So I am committed to striking a balance between festivity and nutrition. \u00a0Enter: \u00a0<strong>Monkey Bites<\/strong>!<\/p>\n<p>These cookies have all the flavor (and more!) of your typical chocolate chip cookie, but instead of being filled with flour and sugar, you get bananas and oats. \u00a0These are soft cookies, and I keep them in the fridge when I&#8217;m done. \u00a0But the best part of Monkey Bites is that they use three of these:<\/p>\n<p style=\"text-align: left;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/overripe-banana.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-16241\" alt=\"overripe banana\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/overripe-banana-300x168.jpg\" width=\"300\" height=\"168\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/overripe-banana-300x168.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/overripe-banana-1024x576.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/12\/overripe-banana.jpg 1600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>So if you are looking for a healthier chocolate chip cookie (or you have a\u00a0few squishy bananas to contend with), try these Monkey Bites. \u00a0And feel free to customize: \u00a0butterscotch or peanut butter chips would be delicious, or add dried cranberries or cherries to pair nicely with the chocolate chips. \u00a0The sky is the limit!<\/p>\n<p><strong>Monkey Bites<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 overripe bananas<\/li>\n<li>2 cups oats<\/li>\n<li>3 tablespoons coconut oil or butter<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1\/2 teaspoon cinnamon<\/li>\n<li>3\/4 cup (or about half a bag) of chocolate chips<\/li>\n<li>1\/2 cup shredded unsweetened coconut<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 375*F. \u00a0Lightly grease a cookie sheet or use a Silpat liner.<\/li>\n<li>In a large bowl, mash bananas with a fork. \u00a0Stir in the rest of the ingredients, mixing well.<\/li>\n<li>Using a spoon and fork, scoop up a largish tablespoon of cookie dough and place on baking sheet. \u00a0You&#8217;re going to have to mold it into shape, because these don&#8217;t spread. \u00a0Mine are about 2&#8243;
