Just a few days now \u2018til we will celebrate Thanksgiving with our loved ones recognizing the goodness of our great God (and eating some yummy food, too)!<\/p>\n<p>For the past few weeks, we have been sharing some of the dishes that we will be preparing to serve and share; did you take a peek at that <a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/11\/22\/mocha-brownie-torte\/\" target=\"_blank\">scrump-diddly-umptious Mocha Brownie Torte<\/a>\u00a0that Dana gave us her recipe for? \u00a0Today I am sharing my recipe for an equally delicious dish that is in a totally different category:<span style=\"color: #800000;\"><strong> Roasted Beet and Goat Cheese Salad<\/strong><\/span>. This recipe keeps within the parameters of our healthy but oh-so-yummy point of view. \u00a0A very light vinaigrette is served on this salad.<\/p>\n<p>I hope you each have a wonderful, thanks-filled, counting your blessings kind of Thanksgiving Day! \u00a0May we each always remember how very, very much we have to be thankful for and give thanks to the One Who so mercifully and abundantly and graciously provides for our every need!<\/p>\n<blockquote>\n<p style=\"text-align: center;\">Oh, that men would praise the Lord for His goodness and lovingkindness and His wonderful works to the children of men!<br \/>\nLet them sacrifice the sacrifices of thanksgiving and rehearse His deeds with shouts of joy and singing!<br \/>\nPsalms 107:21 and 22<\/p>\n<\/blockquote>\n<h3 style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-24-18.55.52.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15895\" alt=\"2013-11-24 18.55.52\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-24-18.55.52-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-24-18.55.52-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-24-18.55.52.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/h3>\n<h3 style=\"text-align: center;\"><span style=\"color: #800e29;\">Roasted Beet and Goat Cheese Salad<\/span><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<\/p>\n<p>1\/4 cup balsamic vinegar<br \/>\n1 tablespoon honey<br \/>\n1\/3 cup extra-virgin olive oil<br \/>\nKosher salt and freshly ground black pepper<br \/>\n3-4 medium beets, peeled and cut into bite-size pieces<br \/>\n6 cups fresh arugula (or your favorite lettuce blend)<br \/>\n1\/2 cup pistachios<br \/>\n3 ounces soft fresh goat cheese, coarsely crumbled<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<br \/>\nLine a baking sheet with foil. Preheat oven to 450.<br \/>\nWhisk the balsamic vinegar and honey together in a small bowl to blend.<br \/>\nSlowly whisk in the oil. Season the vinaigrette with salt and pepper.<br \/>\nIn a different bowl, toss the beets with just enough of the vinaigrette to coat.<br \/>\nPlace the beets on the foil-lined baking sheet and roast \u2018til the beets are slightly caramelized, stirring once or twice, for about 30 minutes. \u00a0Set aside and cool.<br \/>\nToss the arugula (and\/or other lettuces) along with a small amount of the remaining vinaigrette in a large bowl \u2018til lightly coated.<br \/>\nSeason the salad, to taste, with additional salt and pepper.
