Our featured veggie is <span style=\"color: #e1541d;\">Cauliflower<\/span>. Here are some <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=13\" target=\"_blank\">nutritional facts<\/a> about this \u2018superfood.\u2019<br \/>\n\u201cWe\u201d love <span style=\"color: #e1541d;\">cauliflower<\/span> here in our household. \u00a0I say,<em> \u201cwe\u201d<\/em> because every time I tell my husband, Robert, that I have a new way to fix <span style=\"color: #e1541d;\">cauliflower<\/span>, he <strong>never<\/strong> (may I repeat, <em>never<\/em>) responds enthusiastically. \u00a0But I am happy to report that <strong>every time<\/strong> (may I repeat, <em>every time<\/em>) he eats the dish I\u2019ve prepared, his response is<strong> always<\/strong> (may I repeat, <em>always<\/em>) enthusiastic. \u00a0Ok\u2014it\u2019s taken me a while to figure this out but apparently the <span style=\"color: #e1541d;\">cauliflower<\/span> dishes he grew up eating were just boiled, (overcooked), soggy, gray cauliflower-yucky! \u00a0 I trust that if you have had experiences similar to Robert\u2019s, you will try this <span style=\"color: #e1541d;\">Cauliflower Mac and Cheese<\/span> and have a new yummy experience! \u00a0Enjoy!<\/p>\n<h3><span style=\"color: #e1541d;\">Cauliflower Mac and Cheese<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-19.11.26.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15567\" alt=\"2013-11-01 19.11.26\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-19.11.26-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-19.11.26-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-19.11.26.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><\/h3>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients:<\/strong><\/span><\/p>\n<p>1 large head <span style=\"color: #e1541d;\">cauliflower<\/span>, cut into small florets<br \/>\n1 can evaporated milk<br \/>\n1\/2 cup chicken or vegetable broth <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-17.36.09.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15566\" alt=\"2013-11-01 17.36.09\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-17.36.09-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-17.36.09-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-17.36.09.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n2 ounces cream cheese, cubed (or goat cheese, or Boursin)<br \/>\n2 teaspoons Dijon mustard<br \/>\n1 tablespoon chopped garlic<br \/>\n1\/2 cup shredded sharp Cheddar cheese, plus 1\/4 cup for topping the casserole<br \/>\nkosher salt, freshly ground black pepper<br \/>\n1\/4 teaspoon nutmeg (freshly grated, if possible)<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Preheat the oven to 375.<\/li>\n<li>Bring a large pot of water to a boil, seasoning the water with salt.<\/li>\n<li>Lightly grease a 2 quart baking dish with butter or cooking spray.<\/li>\n<li>When the water comes to a full boil, toss in the cut-up <span style=\"color: #e1541d;\">cauliflower<\/span>; return to a boil and parboil \u2018til crisp-tender, about 5 minutes.<\/li>\n<li>Drain well in colander, and then lay out on a clean dishtowel and pat dry. &lt;The drier the <span style=\"color: #e1541d;\">cauliflower<\/span>, the better the cheese sauce will cling to it.&gt;<\/li>\n<\/ul>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-18.33.57.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15568\" alt=\"2013-11-01 18.33.57\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-18.33.57-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-18.33.57-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/11\/2013-11-01-18.33.57.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<ul>\n<li>Transfer the <span style=\"color: #e1541d;\">cauliflower<\/span> to the baking dish and set aside.<\/li>\n<li>Bring the evaporated milk and broth to a simmer in a small saucepan over medium low heat.<\/li>\n<li>Whisk in the cream cheese, mustard, chopped garlic; continuously whisking \u2018til smooth.<\/li>\n<li>Add the 1\/2 cup of shredded cheese, along with the seasonings and whisk just \u2018til the cheese melts, about 2 minutes.<\/li>\n<li>Pour the cheese sauce over the <span style=\"color: #e1541d;\">cauliflower<\/span>, and stir gently to combine thoroughly.<\/li>\n<li>Top with the remaining 1\/4 cup cheese and bake for approximately 15 to 20 minutes.
