{"id":15535,"date":"2013-11-01T00:30:49","date_gmt":"2013-11-01T05:30:49","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=15535"},"modified":"2013-10-31T21:57:22","modified_gmt":"2013-11-01T02:57:22","slug":"oven-roasted-pork-chops-lemon-caper-sauce","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/11\/01\/oven-roasted-pork-chops-lemon-caper-sauce\/","title":{"rendered":"Oven-Roasted Pork Chops with Lemon-Caper Sauce"},"content":{"rendered":"<div>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><span style=\"font-family: 'Trebuchet MS', sans-serif; font-size: large;\"><a href=\"http:\/\/4.bp.blogspot.com\/-CKt5TTe7Xes\/TWgFM_YyI2I\/AAAAAAAAAE8\/bXRYj1pBrj8\/s1600\/Pork%2BChop%2Bwith%2BCapers.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" id=\"BLOGGER_PHOTO_ID_5577713859230311266\" style=\"border: 0px;\" alt=\"\" src=\"http:\/\/4.bp.blogspot.com\/-CKt5TTe7Xes\/TWgFM_YyI2I\/AAAAAAAAAE8\/bXRYj1pBrj8\/s400\/Pork%2BChop%2Bwith%2BCapers.jpg\" width=\"400\" height=\"266\" border=\"0\" \/><\/a><\/span><\/p>\n<p style=\"text-align: left;\">Where others have a sweet tooth, I have a sour tooth. \u00a0I&#8217;ve been known to use only vinegar, and skip the oil, when dressing my salad. \u00a0I eat cornichons like other people eat bon-bons. \u00a0So when I saw this recipe for <strong>Oven-Roasted Pork Chops with Lemon-Caper Sauce<\/strong>, I knew I was going to like it.<\/p>\n<p style=\"text-align: left;\">Using a recipe from my\u00a0<em>Complete America&#8217;s Test Kitchen TV Show Cookbook\u00a0<\/em>(which I highly recommend!), I made a few changes to work with what I had. \u00a0If you don&#8217;t have a shallot, feel free to use a red onion &#8211; just mince as finely as possible. \u00a0These pork chops were easy, quick, and nearly fool-proof. \u00a0They were tart and tangy (but not pucker, so if you are not a sour-lover like me, you won&#8217;t be put off.)<\/p>\n<p style=\"text-align: left;\"><strong>Oven-Roasted Pork Chops with Lemon-Caper Sauce<\/strong><\/p>\n<p style=\"text-align: left;\">Ingredients:<\/p>\n<ul>\n<li>4 pork chops, about 1 1\/2 inches thick, trimmed of excess fat<\/li>\n<li>2 tablespoons oil or bacon fat for cooking<\/li>\n<li>1 medium shallot, minced<\/li>\n<li>1 cup chicken broth<\/li>\n<li>1\/4 cup lemon juice (about 2 lemons)<\/li>\n<li>2 tablespoons capers, drained<\/li>\n<li>3 tablespoons butter<\/li>\n<\/ul>\n<div>\n<p>\u00a0Directions:<\/p>\n<ol>\n<li>Preheat oven to 450*F. \u00a0Heat the oil in a large skillet over high heat, and brown the pork chops on one side, for about 2 minutes. \u00a0Flip and brown the other side, another 2 minutes.<\/li>\n<li>Transfer the chops to a foil-lined baking sheet or large, wide baking dish (so they aren&#8217;t crowded or touching each other.) \u00a0Roast in the oven until the internal temperature reaches 140*F on a thermometer, about 15 minutes, turning them over halfway through cooking time. \u00a0Remove from the oven, place on a platter, and cover with aluminum foil.
