{"id":15323,"date":"2013-10-21T01:00:29","date_gmt":"2013-10-21T06:00:29","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=15323"},"modified":"2013-10-20T19:01:07","modified_gmt":"2013-10-21T00:01:07","slug":"harvest-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/10\/21\/harvest-soup\/","title":{"rendered":"Harvest Soup"},"content":{"rendered":"<p style=\"text-align: center;\"><a title=\"Harvest Soup\" href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-15-21.49.39.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-15324\" alt=\"2013-10-15 21.49.39\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-15-21.49.39-300x225.jpg\" width=\"400\" height=\"325\" \/><\/a><\/p>\n<p>This past weekend some of my large family (I have 7 brothers and sisters, along with their spouses, children, and grandchildren and my own daughter, son-in-law, and their 4 children!) came to celebrate my 58th birthday; happy me!\u00a0 One dish that we shared was a <strong><em>Harvest Soup<\/em><\/strong>, full of veggies and grated apples&#8230;very yummy.\u00a0 This is a slightly sweet soup, very satisfying and\u00a0filling.\u00a0 Also, I chose to make it vegan since I was sharing it with my beautiful sister, Brigit.\u00a0 (The dollop of sour cream in the above pic was in my own bowl of yummy soup!)\u00a0 This would make a great addition to your own menu when you have vegans, vegetarians, and meat-eaters \ud83d\ude09 sharing a meal together.<\/p>\n<p>Here on our Monday installment of <strong>At Home w\/ GCH<\/strong>, we have been featuring recipes which included\u00a0Fall in-season fruits and veggies.\u00a0 This week, our recipe features a few: apples, cauliflower, and (surprise!) butternut squash.\u00a0 This week\u2019s recipe fits into our <strong><em>healthy but-oh-so-yummy! <\/em><\/strong><em>category<\/em> since it is\u00a0really yummy (did i mention that before?), extremely low in fat, and full of delicious, nutritious vegetables.\u00a0 Enjoy!\u00a0 &lt;3<\/p>\n<h3>Harvest Soup<\/h3>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n2 butternut squash<br \/>\n1 large head of cauliflower<br \/>\n3 teaspoons olive oil<br \/>\nKosher salt, freshly ground pepper<br \/>\n1 sweet onion<br \/>\n1 additional teaspoon olive oil<br \/>\n2-3 tablespoons chopped garlic<br \/>\n2 quarts of vegetable stock<br \/>\n2-3 apples, grated<br \/>\n1 can coconut milk (shake well!)<\/p>\n<p><span style=\"text-decoration: underline;\">Optional add-ins<\/span>:<br \/>\nCooked, crumbled bacon<br \/>\nSour cream<br \/>\nShredded sharp Cheddar<br \/>\nChopped avocado<br \/>\nSprinkle of cinnamon (try it!)<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong>:<\/p>\n<ul>\n<li>Preheat oven to 425.<\/li>\n<li>Peel the butternut squash; scoop out the seeds and strings; and cut up into 2&#8243; pieces.\u00a0 Set aside in a large bowl.<\/li>\n<li>Cut up the cauliflower into smallish-size florets; add to bowl.\u00a0 Pour in olive oil and season veggies with salt and pepper.\u00a0 Stir well, pour onto a baking sheet and roast for 20-25 minutes.<\/li>\n<li>Meanwhile, dice onion fairly small and saute along with 1 teaspoon olive oil over medium high heat for 5 minutes or so; reduce heat to low and add in chopped garlic stirring constantly for 1 minute.<\/li>\n<li>Pour in the vegetable stock; add salt and pepper to taste and simmer gently.<\/li>\n<li>When the veggies in the oven are done roasting, remove from oven and immediately pour into your stockpot.\u00a0 Stir well to combine.\u00a0 Allow to simmer for 20 minutes or so,adjusting heat if necessary.<\/li>\n<li>When done, scoop out about 1\/3 of the veggies and use an immersion blender to puree what is left in the stockpot.\u00a0 (This could also be mashed, or, very carefully, pureed in a standard blender in batches.)\u00a0 Taste (be careful&#8230;it\u2019s hot!) for additional seasoning, and add back in the reserved veggies.<\/li>\n<li>Add the grated apple and pour in the coconut milk; stir well.\u00a0 Done!<\/li>\n<li>Optional add-ins can be put atop individual bowls of soup.<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #685fa0;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p style=\"text-align: left;\"><strong>God loves you<\/strong>!
