{"id":15061,"date":"2013-10-07T00:30:55","date_gmt":"2013-10-07T05:30:55","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=15061"},"modified":"2013-10-06T19:26:53","modified_gmt":"2013-10-07T00:26:53","slug":"roasted-b-b-b-topping","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/10\/07\/roasted-b-b-b-topping\/","title":{"rendered":"Roasted B, B, and B Topping"},"content":{"rendered":"<p>Ok, so what do you do when your sister food-blogger posts EXACTLY the same recipe you were going to post?\u00a0 Well, first you tell her how good hers looked (<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/10\/04\/brussels-sprouts-bacon\/\" target=\"_blank\">check it out<\/a>) then you scurry to the refrigerator to see what else you can throw together!<\/p>\n<p>As promised, we are focusing on\u00a0Fall in-season fruits and veggies for a few weeks.\u00a0 This week, we have a Roasted <span style=\"color: #ff6600;\">Butternut<\/span>&#8211;<span style=\"color: #339966;\">Brussels Sprouts<\/span>&#8211;<span style=\"color: #b80810;\">Beet<\/span> recipe.\u00a0 We enjoyed this topping a salad with goat cheese and candied nuts.\u00a0 \u00a0This recipe makes enough for some leftovers, perfect for a Roasted Veggie Lasagna! \u00a0Perhaps you might want to try it as a pizza topping, or over pasta or rice.\u00a0 Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-21.10.46.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-15071\" alt=\"2013-10-04 21.10.46\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-21.10.46-300x225.jpg\" width=\"371\" height=\"278\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-21.10.46-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-21.10.46.jpg 960w\" sizes=\"auto, (max-width: 371px) 100vw, 371px\" \/><\/a><\/p>\n<h3><strong>Roasted <span style=\"color: #ff9900;\">Butternut Squash<\/span>, <span style=\"color: #99cc00;\">Brussels Sprouts<\/span>, and <span style=\"color: #b80810;\">Beets<\/span><\/strong><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-19.36.19.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-15072\" alt=\"2013-10-04 19.36.19\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-19.36.19-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-19.36.19-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/2013-10-04-19.36.19-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\n1\/2 large <span style=\"color: #ff9900;\">Butternut squash<\/span>, peeled<br \/>\n1 medium sweet onion, peeled<br \/>\n1 bunch <span style=\"color: #b80810;\">beets<\/span> (3-5) peeled<br \/>\n6-8 ounces <span style=\"color: #99cc00;\">Brussels sprouts<\/span><br \/>\n3-4 tablespoons olive oil<br \/>\nkosher salt, freshly ground black pepper<\/p>\n<p>optional:<br \/>\n3-4 tablespoons candied walnuts *<br \/>\n2 links fully-cooked chicken sausage<br \/>\n3 ounces herbed goat cheese<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Preheat oven to 425.<\/li>\n<li>Cut <span style=\"color: #ff9900;\">squash<\/span> and<span style=\"color: #b80810;\"> beets<\/span> into 1&#8243; cubes.<\/li>\n<li>Cut off end of each <span style=\"color: #99cc00;\">Brussels sprout<\/span> and any leaves that are brown or dry.\u00a0 If large, halve lengthwise.<\/li>\n<li>Cut onion in half around the middle, and then slice into half-moons.<\/li>\n<li>In a large bowl, combine <span style=\"color: #ff9900;\">squash<\/span>, <span style=\"color: #99cc00;\">sprouts,<\/span> and onions; drizzle 2 tablespoons olive oil over them, season well and stir to evenly distribute the oil among the veggies.<\/li>\n<li>Pour onto 2 rimmed baking sheets.<\/li>\n<li>Now pour the cubed <span style=\"color: #b80810;\">beets<\/span> into the bowl adding up to 1 tablespoon additional olive oil, if necessary.\u00a0 Add the<span style=\"color: #b80810;\"> beets<\/span> to one area of one baking sheet; this will keep the<span style=\"color: #b80810;\"> beets<\/span> from \u2018bleeding\u2019 onto the other veggies.<\/li>\n<li>Roast for 15-20 minutes or \u2018til the veggies begin to caramelize.<\/li>\n<li>Remove from oven, stir well turning pieces over, if possible.<\/li>\n<li>Roast for an additional 15 minutes or \u2018til the other side begins to caramelize.<\/li>\n<li>Test with a knife tip to make sure veggies are cooked through.\u00a0 Allow to cool.<\/li>\n<\/ul>\n<p>* <b>Candied Walnuts <\/b><br \/>\n1 cup apple cider<br \/>\n3 tablespoons coconut sugar<br \/>\npinch of sea salt<br \/>\n1 cup raw walnuts<\/p>\n<ul>\n<li>Bring apple cider to a boil in a small saucepan; turn down heat but keep at a good simmer.\u00a0 Let reduce by \u00bd.<\/li>\n<li>Lower heat, and add sugar stirring \u2018til dissolved.\u00a0 Add salt and walnuts; stir well.<\/li>\n<li>Continue to cook at a low simmer, <strong>stirring constantly<\/strong> \u2018til liquid is almost evaporated.<\/li>\n<li>Remove from heat; pour onto a small plate and allow to harden.<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #99cc00;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!
