{"id":15030,"date":"2013-10-04T00:30:34","date_gmt":"2013-10-04T05:30:34","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=15030"},"modified":"2013-10-03T21:14:43","modified_gmt":"2013-10-04T02:14:43","slug":"brussels-sprouts-bacon","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/10\/04\/brussels-sprouts-bacon\/","title":{"rendered":"Brussels Sprouts with Bacon"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/Brussels-Sprouts-with-Bacon.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-15031\" alt=\"Brussels Sprouts with Bacon\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/Brussels-Sprouts-with-Bacon-1024x681.jpg\" width=\"430\" height=\"286\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/Brussels-Sprouts-with-Bacon-1024x681.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/Brussels-Sprouts-with-Bacon-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/10\/Brussels-Sprouts-with-Bacon.jpg 1600w\" sizes=\"auto, (max-width: 430px) 100vw, 430px\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Fall is here, and I couldn&#8217;t be happier! \u00a0One of my favorite cool weather veggies is Brussels sprouts. \u00a0I remember growing up, my sister hated them so much, she only managed to choke them down if she smothered them in yellow mustard. \u00a0If you have someone like that in your family, reintroduce them to this wonderful, healthy vegetable with this recipe for <strong>Brussels Sprouts with Bacon<\/strong>! \u00a0This side dish comes together quickly&#8230;and, yes, you can feel free to double the amount of bacon in the recipe.<\/p>\n<h3><strong>Brussels Sprouts with Bacon<\/strong><\/h3>\n<p style=\"text-align: left;\">Ingredients:<\/p>\n<ul>\n<li>2 slices bacon<\/li>\n<li>1 pound Brussels sprouts<\/li>\n<li>1\/4 cup plain yogurt or sour cream<\/li>\n<li>1 teaspoon prepared horseradish<\/li>\n<li>salt and pepper<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Fry the bacon. \u00a0You want it pretty crispy. \u00a0When done, remove from pan to cool, but do NOT drain the bacon grease from the pan.<\/li>\n<li>While the bacon is cooking, prepare the Brussels sprouts: \u00a0Trim off the bottoms and slice in half lengthwise. \u00a0Remove any outer leaves that are yellow or spotty.<\/li>\n<li>Add the sprouts to the bacon grease in the pan. \u00a0Saute for about five minutes until they start to color a little. \u00a0Add 2 tablespoons of water and cover with a lid, so you are now steaming them. \u00a0Cook for another five minutes, then remove the lid and cook them uncovered for about 3 minutes. \u00a0They should be getting golden and softening up a bit.<\/li>\n<li>While the sprouts are steaming, combine the yogurt and horseradish in a large bowl. \u00a0When the sprouts are done and al dente, pour them into the bowl and toss with the yogurt mixture. \u00a0Dice the bacon and add it to the bowl, or you can sprinkle it over the top if you like.
