{"id":14935,"date":"2013-09-30T01:00:00","date_gmt":"2013-09-30T06:00:00","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=14935"},"modified":"2013-09-29T21:14:42","modified_gmt":"2013-09-30T02:14:42","slug":"butternut-squash-sausage-soup","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/09\/30\/butternut-squash-sausage-soup\/","title":{"rendered":"Butternut Squash-Sausage Soup"},"content":{"rendered":"<p>\u266a\u266c\u00a0 It\u2019s the most wonderful time of the year! \u00a0\u266c\u266a\u00a0\u00a0Yes, I know&#8230;that\u2019s a song you might sing during the Christmas holiday season&#8230;but for <em>me<\/em> AUTUMN is the most wonderful time of the year! \u00a0The weather is delightful&#8230;back to <span class=\"GINGER_SOFATWARE_correct\">sleeping<\/span> with the windows open a crack, and we get to break out our beautiful sweaters! \u00a0And some of my favorite ingredients to cook and bake with are in-season: pumpkin, apples, cider, pears, cranberries, <span style=\"color: #ff6600;\">butternut squash<\/span> (ok&#8230;all the winter squashes!), cauliflower, <span class=\"GINGER_SOFATWARE_correct\">brussel<\/span> sprouts, kale!<\/p>\n<p>For the next few weeks, our Monday blog here\u00a0on <strong>At Home w\/ GCH<\/strong> will focus on these ingredients while keeping to our <em>healthy but oh-so-yummy<\/em>! <span class=\"GINGER_SOFATWARE_correct\">point<\/span> of view.<\/p>\n<p>Today\u2019s recipe is also our first soup of the season&#8230;<span style=\"color: #ff6600;\">Butternut Squash<\/span>-Sausage Soup. \u00a0Here\u2019s a <a href=\"http:\/\/www.wholeliving.com\/134734\/power-foods-butternut-squash\" target=\"_blank\">link<\/a> showing the incredible nutritional value of <span style=\"color: #ff6600;\">butternut squash<\/span>. \u00a0This recipe <span class=\"GINGER_SOFATWARE_correct\">remain<\/span> within our healthy but oh-so-yummy parameters as it is l-o-a-ded with veggies and, while\u00a0very smooth and\u00a0\u00a0creamy, contains not a speck of butter or sour cream or cheese.\u00a0 Enjoy!<\/p>\n<h3><span style=\"color: #ff6600;\">Butternut Squash-Sausage Soup<\/span><\/h3>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-28-13.33.17.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14936\" alt=\"2013-09-28 13.33.17\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-28-13.33.17-225x300.jpg\" width=\"258\" height=\"300\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span>:<br \/>\n1 <span style=\"color: #ff6600;\">butternut squash<\/span>, 3#<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-27-16.59.05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-14937\" alt=\"2013-09-27 16.59.05\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-27-16.59.05-225x300.jpg\" width=\"225\" height=\"300\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-27-16.59.05-225x300.jpg 225w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-27-16.59.05-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><br \/>\n2-3 tablespoons olive oil, divided<br \/>\n1\/2# <span class=\"GINGER_SOFATWARE_correct\">italian<\/span> turkey sausage, removed from casings<br \/>\n1\/2# ground chicken (or turkey)<br \/>\n1 large sweet onion<br \/>\n6-8 ounces Baby Bella mushrooms<br \/>\n1 red or yellow bell pepper<br \/>\n3-4 tablespoons chopped garlic<br \/>\n<span class=\"GINGER_SOFATWARE_correct\">kosher<\/span> salt, freshly ground black pepper<br \/>\n1\/2 teaspoon each: dried sage, marjoram, and basil<br \/>\n8 cups chicken broth<br \/>\n1 can of white beans, drained and rinsed<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Preheat the oven to 425.<\/li>\n<li>Cut and peel <span style=\"color: #ff6600;\">butternut squash<\/span>; dice into 2&#8243; pieces. Place in a large bowl with 2 tablespoons olive oil; liberally season with salt &amp; pepper.\u00a0 Stir until well-coated.\u00a0 Pour onto a large baking sheet lined with foil\u00a0and roast for 10 minutes.\u00a0 Stir and flip pieces over.\u00a0 Roast for an additional 10 minutes.\u00a0 Remove from oven, and set aside.<\/li>\n<li>While the\u00a0<span style=\"color: #ff6600;\">butternut squash<\/span>\u00a0is roasting, saute meats together in a large frypan, allowing them to brown just a bit.\u00a0 Use the edge of a wooden spoon (or a potato masher) to break <span class=\"GINGER_SOFATWARE_correct\">pieces<\/span> up as they cook into smaller pieces.\u00a0 Remove to a bowl, leaving the juices in the pan.<\/li>\n<li>Dice the onion, the pepper, and the mushrooms into similar-sized pieces, approximately 1+1\/2&#8243;. \u00a0Add the onion to the frypan and saute for 5 minutes on medium-high heat, stirring occasionally.\u00a0 Then add the mushrooms.\u00a0 Cook for another 5 minutes; allow the veggies <span class=\"GINGER_SOFATWARE_correct\">to begin to caramelize<\/span>.\u00a0 Add in the peppers; cook for an additional 5 minutes, stirring occasionally.\u00a0 Finally add the chopped garlic and the seasonings, cook for 1 minute stirring <em>constantly<\/em>.<\/li>\n<li>Pour in the chicken broth, stir, and bring to a boil.\u00a0\u00a0Add the roasted <span style=\"color: #ff6600;\">butternut squash<\/span> and the beans.\u00a0 Reduce heat, and simmer for 20 minutes.<\/li>\n<li>Scoop out about 1+1\/2 cups of <span class=\"GINGER_SOFATWARE_correct\">the chunkier<\/span> pieces; set aside.<\/li>\n<li>With a <a href=\"http:\/\/www.cooksillustrated.com\/equipment\/overview.asp?docid=23596\" target=\"_blank\"><span class=\"GINGER_SOFATWARE_correct\">hand-held<\/span> immersion blender<\/a> * carefully puree the soup (or in batches in a countertop blender).<\/li>\n<li>Add in the cooked meats plus the veggies you put aside.\u00a0 Stir all well together, and simmer for 5-10 additional minutes.\u00a0 Taste (carefully!) for additional seasoning.<\/li>\n<\/ul>\n<p>* <span style=\"text-decoration: underline;\"><strong>Note<\/strong><\/span>: I simply love my immersion blender (we own the Oster 3-in-1)!\u00a0\u00a0I use it almost every day. \u00a0It\u00a0is so handy\u00a0for many simple, quick blending jobs&#8230;even for smoothies or milkshakes.\u00a0 The best part&#8212;it is extremely easy to clean and most often is used right in the cooking pot you are using&#8230;not dirtying yet another thing to wash up!\u00a0 \u00a0A good quality immersion blender can be purchased for around $25.<\/p>\n<p style=\"text-align: center;\"><span style=\"color: #ff6600;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!
