\u00a0But making it on a sheet pan instead of in a loaf pan lets the fat drain away, and all the sides get nice and crusty. \u00a0It&#8217;s easy, it&#8217;s a crowd pleaser, and it doesn&#8217;t take long to put together. \u00a0Let&#8217;s get into it!<\/p>\n<h2><strong>Meatloaf<\/strong><\/h2>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 small onion<\/li>\n<li>4 cloves garlic<\/li>\n<li>2 stalks celery<\/li>\n<li>1 carrot<\/li>\n<li>4 slices bacon<\/li>\n<li>1\/2 teaspoon dried Italian herbs, or oregano<\/li>\n<li>2 pounds ground beef<\/li>\n<li>2 eggs<\/li>\n<li>a big squirt of ketchup (maybe 2 tablespoons)<\/li>\n<li>a big squirt of yellow mustard (maybe 2 tablespoons)<\/li>\n<li>1\/2 teaspoon Worcestershire sauce<\/li>\n<li>1\/2 teaspoon hot sauce, your choice (Sriracha or Tabasco, whatever you have)<\/li>\n<li>1\/3 cup coconut flour (you could use 1\/2 cup bread crumbs if you like, or even ground oats)<\/li>\n<li>salt and pepper<\/li>\n<li>4 tablespoons ketchup<\/li>\n<li>3 tablespoons mustard<\/li>\n<li>1\/4 cup brown sugar<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div id=\"attachment_14910\" style=\"width: 440px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Meatloaf-Raw-Resized.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-14910\" class=\" wp-image-14910  \" alt=\"Let's bake this bad boy!\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Meatloaf-Raw-Resized-1024x767.jpg\" width=\"430\" height=\"322\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Meatloaf-Raw-Resized-1024x767.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Meatloaf-Raw-Resized-300x224.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Meatloaf-Raw-Resized.jpg 1091w\" sizes=\"auto, (max-width: 430px) 100vw, 430px\" \/><\/a><p id=\"caption-attachment-14910\" class=\"wp-caption-text\">Let&#8217;s bake this bad boy!<\/p><\/div>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 400*F. \u00a0Line a baking sheet with aluminum foil.<\/li>\n<li>Add the onion, garlic, celery, and carrot to the food processor and blend until combined and kind of pureed. \u00a0You don&#8217;t want any big chunks. \u00a0Empty the veggie puree into a very large mixing bowl, then add the bacon to the food processor. \u00a0Blend until ground and add to the veggie puree.<\/li>\n<li>Add the rest of the ingredients&#8212;up through the salt and pepper&#8212;to the mixing bowl. \u00a0Mix with your hands until combined. \u00a0Dump out the meatloaf mix onto the baking sheet and form a loaf with your hands. \u00a0You want it to be long and flat, kind of like a loaf of French bread. \u00a0Smooth it out and make it even.<\/li>\n<li>In a small bowl, stir together the remaining ketchup, mustard, and brown sugar. \u00a0Frost the top of the meatloaf with the ketchup mixture.<\/li>\n<li>Bake for one hour, or until internal temperature reaches 165*F. \u00a0My kids eat this with lots of additional ketchup!<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; This Meatloaf started out following one of Martha Stewart&#8217;s recipes, but over the years I&#8217;ve kind of made it my own. \u00a0I think what makes this a great meatloaf is that it&#8217;s not actually baked in a loaf pan. \u00a0It&#8217;s a freeform meat sculpture!
