{"id":14613,"date":"2013-09-13T01:00:58","date_gmt":"2013-09-13T06:00:58","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=14613"},"modified":"2013-09-12T20:31:50","modified_gmt":"2013-09-13T01:31:50","slug":"roasted-chipotle-salsa","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/09\/13\/roasted-chipotle-salsa\/","title":{"rendered":"Roasted Chipotle Salsa"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Roasted-Chipotle-Salsa.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14618\" alt=\"Roasted Chipotle Salsa\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Roasted-Chipotle-Salsa-1024x768.jpg\" width=\"430\" height=\"323\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Roasted-Chipotle-Salsa-1024x768.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/Roasted-Chipotle-Salsa-300x225.jpg 300w\" sizes=\"auto, (max-width: 430px) 100vw, 430px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>I planted my garden a little late this year, so my tomatoes are just getting ripe now. \u00a0My husband loves tomatoes in any form, in any dish. \u00a0As for me, the ONE food I don&#8217;t like is plain raw tomatoes. \u00a0I keep them off my sandwiches and salads. \u00a0Every other preparation is fine with me &#8211; ketchup, tomato sauce, anything with cooked tomatoes &#8211; and especially salsa! \u00a0And while I like raw tomato salsas a lot, I like this <strong>Roasted Chipotle Salsa<\/strong> even better!<\/p>\n<p>Chiptole peppers in adobo sauce are easy to find &#8211; just check your local grocery store in the &#8220;ethnic&#8221; aisle with all the other Mexican food. \u00a0They&#8217;re cheap, and they are nearly pickled in the adobo sauce, so once you open the little can, you can keep the rest of the peppers and sauce in a small container in your fridge for months. \u00a0(A little Ball jar, or leftover jelly jar, is perfect for this.) \u00a0Then, if you find you love the smoky, mild heat of chipotles, use some of the others in your jar to make this <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/22\/gch-whats-on-your-plate-chicken-or-turkey-fajitas-salad\/\">dinner salad<\/a>. \u00a0If you can&#8217;t find fresh cilantro at your store, you can leave it out, but it really adds a burst of freshness to this spicy sauce!<\/p>\n<p>This recipe made a little more than a cup for me. \u00a0That said, my husband and I ate it all in one night! \u00a0It was &#8220;taco&#8221; night at our house, but we were using lettuce leaves instead of taco shells. \u00a0Ground beef with onions, avocado slices, and this salsa &#8211; delish!<\/p>\n<p><strong>Roasted Chipotle Salsa<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>3 regular-sized ripe tomatoes (around 1\/2 pound, or a little more)<\/li>\n<li>1\/2 onion<\/li>\n<li>3 cloves garlic<\/li>\n<li>2 teaspoons olive oil<\/li>\n<li>salt<\/li>\n<li>1 chipotle pepper in adobo sauce (or more if you like it spicy!)<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>small handful cilantro, about half a cup<\/li>\n<li>1\/2 lime or lemon<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to Broil. \u00a0Line a baking sheet with aluminum foil. \u00a0Slice the tomatoes in half, removing any core or stem you don&#8217;t like. \u00a0Slice the onion into rounds. \u00a0Peel and smash the garlic cloves. \u00a0Lay these out on the baking sheet and drizzle lightly with olive oil. \u00a0Season with salt.<\/li>\n<li>Broil the vegetables until they start turning brown and are very juicy &#8211; about 8-10 minutes, depending on your oven. \u00a0Remove from the oven. \u00a0Pour the vegetables and any juices into a food processor. \u00a0Add in the cumin, chipotle pepper, cilantro, and hit start. \u00a0Process for a few seconds, then squeeze in the lime juice. \u00a0Process again &#8211; leave it chunky! \u00a0Taste for seasoning &#8211; maybe more salt or lime?
