{"id":14607,"date":"2013-09-16T01:00:09","date_gmt":"2013-09-16T06:00:09","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=14607"},"modified":"2013-09-15T20:38:37","modified_gmt":"2013-09-16T01:38:37","slug":"stuffed-peppers","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/09\/16\/stuffed-peppers\/","title":{"rendered":"Stuffed Peppers"},"content":{"rendered":"<p>Here on Mondays on our <strong>At Home w\/GCH<\/strong> blog we usually focus on recipes that are <i>healthy but oh-so-yummy<\/i>!\u00a0 We have been making some very yummy dishes using in-season veggies; and this week will be our last one\u2014<span style=\"color: #339966;\">Stuffed Peppers<\/span>.\u00a0 I actually consider this week\u2019s recipe a nice bridge into the fall as it is such a comfort food dish!\u00a0 Have you ever made <span style=\"color: #339966;\">Stuffed Peppers<\/span> on the stovetop instead of in the oven?\u00a0 That is how we are doing it this week.\u00a0 Get yourself some nice firm large green bell peppers&#8230;maybe from the Farmers Market, and let&#8217;s get started.\u00a0 Enjoy!<\/p>\n<h2 style=\"text-align: center;\"><strong><span style=\"color: #339966;\">Stove Top Stuffed Peppers<\/span><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-20.06.03.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14608\" alt=\"2013-09-11 20.06.03\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-20.06.03-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-20.06.03-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-20.06.03.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/h2>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n1 cup rice<br \/>\n1\/2 tablespoon butter\u00a0 <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-19.05.00.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-14609\" alt=\"2013-09-11 19.05.00\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-19.05.00-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-19.05.00-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-11-19.05.00.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1 cup water<br \/>\n1 cup chicken broth<\/p>\n<p>4 large green bell peppers<br \/>\n1# ground chicken (or turkey or beef)<br \/>\n1\/2# raw chicken sausage<br \/>\n1 large egg<br \/>\nkosher salt, freshly ground pepper<br \/>\n3 (or more) tablespoons chopped garlic<br \/>\n1 (28 ounce) can crushed tomatoes<br \/>\n1 cup chicken broth<br \/>\nShredded cheese, or grated Parmesan (optional)<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong>:<\/p>\n<ul>\n<li>In a small saucepan, heat the butter over medium heat.\u00a0 Add the raw rice, and saute, stirring constantly for one minute.\u00a0 Carefully add in the liquids and bring quickly to a boil.\u00a0 Reduce the heat to very low, cover, and let cook (approximately 15 minutes) \u2018til all liquid is absorbed.\u00a0 Empty the cooked rice out onto a plate or pan, and allow to cool.<\/li>\n<li>While the rice is cooking, take a large dutch oven (I used an 8 quart pan) and place your peppers in to make sure they fit sitting upright. Once you have the right sized pan, fill 3\/4 with water, cover and bring to a boil.\u00a0 Cut the lids from the peppers (perhaps save the lids to cut up into a salad) and clean them out.\u00a0 When the water is boiling, put the peppers in for 5-7 minutes depending on how large they are to parboil them.\u00a0 Carefully remove from the water, and drain upside down.<\/li>\n<li>Empty the pot of water, and place back on stove over low heat.\u00a0 Add the crushed tomatoes, the broth and the remaining 2 tablespoons chopped garlic; bring to a simmer.<\/li>\n<li>Meantime, in a large bowl, break up the eggs and add the chopped garlic and the meat; generously season with the salt and pepper; mix thoroughly.\u00a0 Stir in about half of the cooled rice (save the rest to serve alongside the <span style=\"color: #339966;\">stuffed peppers<\/span>).<\/li>\n<li>Now to fill the peppers: just before you fill the parboiled peppers, use a knife tip to poke a hole into each of the &#8220;bumps&#8221; on the pepper bottoms.\u00a0 This will allow the sauce to ooze up into the peppers while simmering.\u00a0 Scoop up some of\u00a0the meat\/rice mixture.\u00a0 Fill them firmly but don\u2019t really pack it down; if you do, it will be too dense when cooked.\u00a0 Carefully ease the filled peppers&#8211;right side up&#8211;into the heated tomato sauce.\u00a0 Take care to sit them up so they won\u2019t fall over&#8230;spilling out the meat.<\/li>\n<li>Using a large spoon or gravy ladle, scoop up\u00a0some tomato sauce and pour over each of the filled peppers totally covering the meat.\u00a0 Increase the heat so that the sauce begins to boil, place a lid on the pot and then reduce the heat to a simmer.\u00a0 Every 10 minutes or so, again pour a little sauce over the top of each pepper, replacing the lid on the pot.\u00a0 They should be done in\u00a045 minutes or less, depending on their size.\u00a0 The meat in the <span style=\"color: #339966;\">stuffed peppers<\/span> should be firm when done.\u00a0 I use a thermometer to verify that they have reached at least 160 degrees, just to be safe.<\/li>\n<li>Oh, and add some of the leftover delicious tomato sauce to the rice you set aside; serve that along with the <span style=\"color: #339966;\">Stuffed Peppers<\/span>!\u00a0 Yummy!<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><span style=\"color: #339966;\">\u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665\u00a0 \u2665<\/span><\/p>\n<p><strong>God loves you<\/strong>!
