My.\u00a0 But before I was done being aghast about the cost, he had spied a recipe on the back of the package for <em>Sour Cream Chocolate Cupcakes<\/em>.\u00a0 Even though I nixed the purchase of the flour, I promised to still make the cupcakes.\u00a0 Here we go!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-21.00.47.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14582\" alt=\"2013-09-10 21.00.47\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-21.00.47-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-21.00.47-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-21.00.47.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3><strong>Sour Cream Chocolate Cupcakes<\/strong><\/h3>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n1+1\/2 cups gluten free flour blend *<br \/>\n1+1\/2 teaspoons baking powder\u00a0 <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-15.44.34.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-14583\" alt=\"2013-09-10 15.44.34\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-15.44.34-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-15.44.34-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-10-15.44.34.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n3\/4 teaspoon instant coffee granules<br \/>\n1\/2 teaspoon kosher salt<br \/>\n1 teaspoon ground cinnamon<br \/>\n1\/2 teaspoon xanthan gum<br \/>\n1\/2 cup warmed almond milk<br \/>\n1\/2 cup cocoa powder<br \/>\n1\/2 cup sour cream<br \/>\n6 tablespoons unsalted butter, room temperature<br \/>\n1\/2 cup agave nectar<br \/>\n1\/4 cup coconut (or palm) sugar<br \/>\n1 large egg<br \/>\n1 teaspoon vanilla extract<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong>:<\/p>\n<ul>\n<li>Preheat oven to 325.<\/li>\n<li>Line regular sized 12 cup muffin tin with liners.<\/li>\n<li>In a medium sized bowl, whisk together the first six ingredients\u2014the dry ingredients&#8212;and set aside.<\/li>\n<li>In a small bowl, whisk together the warm milk and the cocoa powder.\u00a0 Then stir in the sour cream; set aside.<\/li>\n<li>Set up a stand mixer with the paddle attachment; add the butter and beat for 3 or 4 minutes on medium \u2018til light and fluffy.<\/li>\n<li>Beat in the agave nectar.\u00a0 Add the coconut sugar, and beat \u2018til light and fluffy again.<\/li>\n<li>Add the egg and vanilla extract beating \u2018til the egg is totally incorporated.<\/li>\n<li>Stir in the sour cream\/chocolate mixture.<\/li>\n<li>Add the dry ingredients to the wet ingredients mixing on the slowest speed just \u2018til they are thoroughly mixed together.<\/li>\n<li>Divide the batter into the paper-lined muffin tin filling to about 3\/4 full (this is a stiff batter).<\/li>\n<li>Bake for 15-20 minutes \u2018til tops spring back when lightly touched and toothpick comes out clean.<\/li>\n<li>Cool for just 3 or 4 minutes in muffin tin then remove and set gently onto a wire rack to cool completely.<\/li>\n<\/ul>\n<p><strong>Chocolate Cream Cheese\/Whipped Cream Frosting<\/strong><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong>:<\/span><br \/>\n1 cup + 2 tablespoons heavy cream, cold<br \/>\n8 ounce package cream cheese, at room temperature<br \/>\n2 tablespoons agave nectar<br \/>\n1 teaspoon vanilla extract , pinch of kosher salt<br \/>\n4 tablespoons cocoa powder<br \/>\n1\/2 cup powdered sugar<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong>:<\/p>\n<ul>\n<li>Chill bowl and beaters in freezer for 10 minutes.<\/li>\n<li>Beat 1 cup heavy cream in chilled bowl \u2018til stiff peaks form.\u00a0 Set aside.<\/li>\n<li>In separate bowl, beat softened cream cheese along with agave nectar, vanilla , and salt for 3 minutes \u2018til light.<\/li>\n<li>Sift in the cocoa powder and the powdered sugar.
