We continue\u00a0this series of\u00a0recipes featuring in-season summer produce. Our featured ingredients this week are <span style=\"color: #ff0000;\">sweet<\/span>, or bell, <span style=\"color: #008000;\">peppers<\/span>.\u00a0 We (by that I mean, Robert!) have successfully grown them in our garden this year!\u00a0 And, yes, <span style=\"color: #ff0000;\">bell<\/span> <span style=\"color: #008000;\">peppers<\/span> are available shipped in from around the country all year long&#8230;but as a locally grown in-season veggie&#8230;this is the height of the season in the <span class=\"GINGER_SOFATWARE_correct\">Northeast<\/span>.\u00a0 Here are some <a href=\"http:\/\/www.fitday.com\/fitness-articles\/nutrition\/healthy-eating\/the-nutrition-of-bell-peppers.html\" target=\"_blank\">nutrition facts <\/a>about <span style=\"color: #ff0000;\">bell<\/span> <span style=\"color: #008000;\">peppers<\/span>.\u00a0 <span style=\"color: #008000;\">Peppers<\/span> are a pretty common veggie found in my refrigerator and incorporated into at least 1 or 2 recipes every week.\u00a0 Our recipe this week highlights them and shows off their <span class=\"GINGER_SOFATWARE_spelling\">yumminess<\/span> to the max!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.55.37.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14497\" alt=\"2013-09-04 19.55.37\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.55.37-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.55.37-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.55.37.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h2><strong><span style=\"color: #ff0000;\">Peppers<\/span> and <span style=\"color: #008000;\">Sausage<\/span><\/strong><\/h2>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span>:<br \/>\n1\/4 cup olive oil, additional if needed <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.33.28.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-14498\" alt=\"2013-09-04 19.33.28\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.33.28-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.33.28-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-19.33.28.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1# Italian sausage*<br \/>\n2 <span class=\"GINGER_SOFATWARE_correct\">yellow<\/span> Bell peppers, cored and sliced thin<br \/>\n2 red Bell peppers, cored and sliced thin<br \/>\n1 green Bell pepper, cored and sliced thin<br \/>\n1 large sweet onion, sliced into halfmoons<br \/>\n3 cups pasta sauce (I used <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/12\/17\/whats-on-your-plate-spaghetti-sauce-with-a-bonus\/\" target=\"_blank\">homemade<\/a> from the freezer)<br \/>\n3 tablespoons chopped garlic (I use jarred)<br \/>\n2 teaspoons each kosher salt, freshly ground black pepper<br \/>\n1-2 teaspoons each dried oregano, basil (or use fresh!)<br \/>\n3 tablespoons freshly grated Parmesan cheese<br \/>\n1\/4 cup shredded Mozzarella<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>Heat 1 tablespoon of olive oil in a medium-sized saute pan.<\/li>\n<li>Cook the sausage \u2018<span class=\"GINGER_SOFATWARE_correct\">til<\/span> lightly browned on both sides.<\/li>\n<li>Add 1 cup of pasta sauce, and simmer on low \u2018<span class=\"GINGER_SOFATWARE_correct\">til<\/span> veggies are done.<\/li>\n<li>In your largest saute pan (or <span class=\"GINGER_SOFATWARE_correct\">dutch<\/span> oven), heat the balance of the olive oil.<\/li>\n<li>Add the sliced onions and saute on medium for 4-5 minutes.<\/li>\n<li>Add in all of the sliced peppers; mix well with the onions coating with a bit of the olive oil.<\/li>\n<li>Continue to saute the veggies for approximately 15 minutes or so, stirring as needed.\u00a0 They should be barely crisp&#8230;more on the softened side.<\/li>\n<li>Stir in the chopped garlic and the seasonings; saute for just 1-2 minutes stirring frequently.<\/li>\n<li>Pour in 2 cups of the pasta sauce making sure to thoroughly mix everything together.<\/li>\n<li>Reduce heat to low&#8230;just so the sauce is gently simmering.<\/li>\n<li>Cut up the sausage into bite-sized pieces and add to the veggies.<\/li>\n<li>Continue to simmer for 5-10 minutes, just so the flavors can meld together.<\/li>\n<li>Garnish with the shredded cheeses.<\/li>\n<li>Serve with bread or over pasta.\u00a0 Enjoy!<\/li>\n<\/ul>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-21.03.23.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14499\" alt=\"2013-09-04 21.03.23\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-21.03.23-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-21.03.23-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-09-04-21.03.23.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>* Use what <em>your<\/em> family likes: fully cooked Italian chicken sausage, sweet Italian pork sausage, Italian turkey sausage&#8230;
