it was so inexpensive, I couldn&#8217;t pass it up. \u00a0But aside from making zucchini bread, I couldn&#8217;t think of how to use it. \u00a0That was when I stumbled upon a recipe for Homemade Ricotta, and it came to me: \u00a0<strong>Zucchini Lasagna<\/strong>!<\/p>\n<p>The zucchini stands in for traditional noodles in this recipe, so if you are following a low-carb diet, or if you are avoiding gluten, you&#8217;re in luck! \u00a0If you are making ricotta, drain and squeeze it to keep any extra liquid out of the casserole. \u00a0Nobody likes a soggy lasagna! \u00a0Feel free to saute and add other veggies or herbs to the lasagna, too &#8211; baby spinach, bell peppers, black olives, or fresh basil would all be lovely!<\/p>\n<p>This is a small casserole, so we ate it with a big salad for dinner. \u00a0You can easily double or quadruple this recipe to serve more people. \u00a0Hope you like it!<\/p>\n<p><strong>Zucchini Lasagna<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 or 2 zucchinis or other summer squash, about 3\/4 pound<\/li>\n<li>cooking spray<\/li>\n<li>1\/2 pound sausage<\/li>\n<li>1\/2 small onion<\/li>\n<li>1 clove garlic<\/li>\n<li>1 can diced tomatoes, drained (I used fire-roasted canned tomatoes)<\/li>\n<li>1\/2 teaspoon Italian herbs, or oregano<\/li>\n<li>salt and pepper<\/li>\n<li>1 cup <a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/08\/23\/homemade-ricotta\/\">Homemade Ricotta<\/a>, or store-bought<\/li>\n<li>1 cup shredded mozzarella cheese<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Preheat oven to 400*F. \u00a0Line a baking sheet with aluminum foil and spray lightly with cooking spray. \u00a0Chop the zucchini into thin coins &#8211; about 1\/8&#8243;-thick. \u00a0Lay out on the baking sheet and bake for about 8 minutes. \u00a0They don&#8217;t need to be cooked through at all &#8211; you just want to dry them out a little bit. \u00a0Remember, no one likes a soggy lasagna!<\/li>\n<li>While the zucchini is drying out, dice the onion, and mince the clove of garlic. \u00a0In a large pan, brown the sausage with the onion and garlic. \u00a0Drain any fat that accumulates. \u00a0Add in the drained tomatoes, oregano, and salt and pepper, and heat through.<\/li>\n<li>In a casserole dish, spray a little cooking spray so nothing sticks. \u00a0Layer half the zucchini slices to cover the bottom of the casserole dish. \u00a0Spread half the ricotta over the zucchini, then spread half the sausage mixture over the ricotta. \u00a0Repeat with the rest of the zucchini, then ricotta, then sausage. \u00a0Cover with the shredded mozzarella.<\/li>\n<li>Cover with a lid or aluminum foil, and bake for 20 minutes. \u00a0Remove lid and bake for another ten minutes, until the cheese is golden and melty.<\/li>\n<\/ol>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
