We are continuing our series of summer recipes featuring in-season produce. Our featured ingredient this week is <span style=\"color: #34ca40;\">basil<\/span>!\u00a0 We can all identify the pungent aroma of <span style=\"color: #34ca40;\">basil<\/span>&#8230;mmmm!\u00a0 <span style=\"color: #34ca40;\">Basil<\/span> has all kinds of health benefits &lt;who knew?!&gt;; check out some <a href=\"http:\/\/foodfacts.mercola.com\/basil.html\" target=\"_blank\">info here<\/a>.\u00a0 While <span style=\"color: #34ca40;\">basil<\/span> is definitely \u2018in-season\u2019 here at the height of the summer growing season, it actually is easily grown as a houseplant.\u00a0 Consider purchasing a small pot of <span style=\"color: #34ca40;\">basil<\/span> (even in the grocery store) and keeping it in a cute little pot right on your sunniest windowsill.\u00a0 Easily you could be pinching off a handful of leaves to make into pesto, or scatter some into a <a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/05\/06\/caprese-salad\/\" target=\"_blank\">Caprese Salad<\/a>, or slicing them\u00a0up to finish off your best pot of spaghetti sauce all winter long!\u00a0 Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-29-22.52.06.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14375\" alt=\"2013-08-29 22.52.06\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-29-22.52.06-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-29-22.52.06-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-29-22.52.06.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3><strong><span style=\"color: #34ca40;\">Pesto<\/span><\/strong><\/h3>\n<p>Ingredients:<br \/>\n2 cups <span style=\"color: #34ca40;\">basil<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-17.06.40.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-14376\" alt=\"2013-08-28 17.06.40\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-17.06.40-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-17.06.40-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-17.06.40.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/span><br \/>\n2 cups baby spinach leaves<br \/>\n3 tablespoons (or more!) chopped garlic (I use jarred)<br \/>\n2\/3 cup pine nuts<br \/>\n1 cup freshly grated Parmesan<br \/>\n1 teaspoon kosher salt<br \/>\n1 teaspoon freshly ground black pepper<br \/>\n1\/2 lemon, juiced<br \/>\n2\/3 cup olive oil<\/p>\n<p><span style=\"text-decoration: underline;\">Directions<\/span>:<\/p>\n<ul>\n<li>Place the\u00a0 pine nuts and garlic in the bowl of a food processor and blend for 15 seconds.<\/li>\n<li>Add the basil, spinach, salt, and pepper.<\/li>\n<li>With the food processor running, slowly pour the olive oil and the lemon juice into the bowl through the feed tube.<\/li>\n<li>Process until the pesto is thoroughly pureed.<\/li>\n<li>Add the Parmesan and puree \u2018til thoroughly incorporated (30-40 seconds).<\/li>\n<li>Use immediately. *See below for hints on storing the extra pesto.\u00a0 Enjoy!<\/li>\n<\/ul>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-18.05.05.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-14377\" alt=\"2013-08-28 18.05.05\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-18.05.05-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-18.05.05-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/09\/2013-08-28-18.05.05-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This is how\u00a0we enoyed the pesto: Mix 1\/4 &#8211; 1\/3 cup into a pound or so of shrimp sauteed with LOTS of garlic.\u00a0 Bread on the side.\u00a0 As you can see, we also enjoyed a delicious Caprese salad (click link above for recipe) as well as spaghetti squash sauteed along with some zucchini.\u00a0 No complaints were heard!\u00a0 \ud83d\ude42<\/p>\n<p>Store extra pesto in the refrigerator for up to 1 week in a small container with a very thin film of olive oil on top (to seal out air).\u00a0 Can also be frozen in an ice cube tray, or (my favorite) in mini-muffin cups.\u00a0 To do this, wipe the muffin tin compartments with a paper towel dipped in olive oil.\u00a0 Spoon in a heaping tablespoon of pesto into the compartments.\u00a0 Place in freezer.\u00a0 After a couple of hours, remove tin from freezer.\u00a0 Set gently into a sink with just a little bit of hot water;
