Today our series on summer recipes featuring in-season produce continues. Our featured ingredient&#8212;again&#8212;this week is <span style=\"color: #2fa73d;\">zucchini<\/span>!\u00a0 Our own little garden (ok, honestly, it is Robert\u2019s garden) is pumping out the <span style=\"color: #2fa73d;\">zucchinis<\/span>.\u00a0 How about you?\u00a0 Are you checking Pinterest or roaming the internet looking for yummy <span style=\"color: #2fa73d;\">zucchini<\/span> recipes?\u00a0 This <span style=\"color: #2fa73d;\">zucchini<\/span> bread recipe uses almond flour so it is low in carbs, high in protein&#8230;very paleo-friendly, too!\u00a0 Enjoy!<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-16-10.34.44.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-14108\" alt=\"2013-08-16 10.34.44\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-16-10.34.44.jpg\" width=\"576\" height=\"432\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-16-10.34.44.jpg 960w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-16-10.34.44-300x225.jpg 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a><\/p>\n<h2><span style=\"color: #2fa73d;\">Gluten Free Zucchini Bread<\/span><\/h2>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n1+1\/2 cups blanched almond flour<br \/>\n1 teaspoon baking soda<br \/>\n1\/4 teaspoon salt<br \/>\n1+1\/2 teaspoon cinnamon<br \/>\n1\/2 cup chopped walnuts or 1\/2 cup chocolate chips (optional)<br \/>\n1 medium-to-large sized\u00a0<span style=\"color: #2fa73d;\">zucchini<\/span><br \/>\n2 large eggs<br \/>\n2-3 tablespoons honey or agave nectar<br \/>\n1 very ripe banana, mashed<br \/>\n1 tablespoon melted coconut oil<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<br \/>\nPreheat oven to 350.\u00a0 Grease a loaf pan and set aside.<br \/>\nGrate the <span style=\"color: #2fa73d;\">zucchini<\/span> (sans the seeds!) onto a tea towel; you should have about 1 cup.\u00a0 Roll the towel up and squeeze to remove excess moisture from the <span style=\"color: #2fa73d;\">zucchini<\/span>.
