\u00a0It makes me picture\u00a0Paris fashion,\u00a0little bistros with snooty waiters, and dining on <em><span class=\"GINGER_SOFATWARE_correct\">vin<\/span><\/em> and <em><span class=\"GINGER_SOFATWARE_correct\">fromage<\/span><\/em> by candlelight. \u00a0In reality, Salad <span class=\"GINGER_SOFATWARE_correct\">Nicoise<\/span> <span class=\"GINGER_SOFATWARE_correct\">is<\/span> just a dressed-up tuna salad! \u00a0This is one of my favorite dinner salads, combining satisfying protein, crunchy vegetables, and a few extra surprises.<\/p>\n<p>Nothing too exotic to buy at the store here. \u00a0You probably don&#8217;t have Nicoise olives at your store (I&#8217;ve never seen them grocery shopping around Los Angeles), but you can easily find a jar of juicy black Kalamata olives. \u00a0I use romaine lettuce (it&#8217;s my absolute favorite!) but you can use any green lettuce, and I&#8217;ve eaten this on baby spinach too. \u00a0You don&#8217;t want to use anything too bitter, though, so stay away from a salad mix that has a lot of <span class=\"GINGER_SOFATWARE_spelling\"><span class=\"GINGER_SOFATWARE_correct\">frisee<\/span>,<\/span> arugula, or escarole. \u00a0I didn&#8217;t have any in my fridge, but a couple of teaspoons of minced parsley would be nice sprinkled over the top. \u00a0You can use this as a jumping off point, and add in other ingredients you like:\u00a0 tomatoes, diced bell pepper, pistachios, or capers. \u00a0Let your imagination run wild, French-style!<\/p>\n<p><strong>Salad Nicoise<\/strong><\/p>\n<p>(Makes 2 dinner salads. \u00a0Serve with bread and white wine if desired.)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>2 tablespoons fresh lemon juice or wine vinegar (red or white is fine) plus one tablespoon reserved for potatoes<\/li>\n<li><span class=\"GINGER_SOFATWARE_correct\">a pinch<\/span>\u00a0of sugar or one drop of honey<\/li>\n<li>1\/4 cup olive oil<\/li>\n<li>1 5-<span class=\"GINGER_SOFATWARE_correct\">oz<\/span>. bag of salad mix or 2 heads of romaine lettuce, washed and chopped<\/li>\n<li>3 or 4 <span class=\"GINGER_SOFATWARE_correct\">hard-boiled<\/span> eggs<\/li>\n<li>2 cans tuna, drained<\/li>\n<li>1 large red- or white-skinned potato (Russet potatoes aren&#8217;t as nice and fall apart &#8211; save them for baked potatoes)<\/li>\n<li>8 oz. <span class=\"GINGER_SOFATWARE_correct\">fresh<\/span> green beans<\/li>\n<li>1 jar <span class=\"GINGER_SOFATWARE_correct\">kalamata<\/span> or other large black olives<\/li>\n<li><span class=\"GINGER_SOFATWARE_correct\">salt<\/span> and pepper<\/li>\n<li><span class=\"GINGER_SOFATWARE_correct\">optional<\/span>: \u00a0minced parsley, basil or tarragon to sprinkle over top<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li>Make the vinaigrette: \u00a0In a small container with a lid, add the mustard, 2 tablespoons lemon juice or vinegar, pinch of sugar, and olive oil, and shake to combine. \u00a0(The pinch of sugar offsets the mustard and vinegar &#8211; you don&#8217;t need to add it, but I think it mellows out the dressing a little.)<\/li>\n<li>Boil a large pot of water on the stove. \u00a0Wash the potato and green beans. \u00a0Chop the potato into one-inch chunks, and cut the green beans into one-inch pieces. \u00a0Add to the boiling water and simmer the potatoes for about ten minutes, then add the green beans and cook for 3 minutes more. \u00a0You should be able to just pierce a potato with a knife or a fork, but you don&#8217;t want the potatoes to break apart. \u00a0When the potatoes are done and just cooked through, drain the water, and sprinkle with the reserved tablespoon of vinegar. \u00a0Set aside.<\/li>\n<li>While the potatoes are cooking, make a bed of the lettuce in 2 large salad bowls. \u00a0Peel the hardboiled eggs and slice into quarters, lengthwise. \u00a0Drain the cans of tuna and flake with a fork. \u00a0Layer the tuna and eggs over the lettuce.<\/li>\n<li>Top the tuna with green beans, potatoes, and olives. \u00a0Season with salt and pepper. \u00a0Drizzle with the dressing and optional chopped herbs.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal <span class=\"GINGER_SOFATWARE_correct\">Girlmet<\/span><\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Salad Nicoise\u00a0sounds fancy, doesn&#8217;t it?
