Our featured ingredient this week is <span style=\"color: #008000;\">zucchini<\/span>!\u00a0 Here is a <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=62\" target=\"_blank\">link<\/a> showing the nutritional value of this summer squash as well as it&#8217;s\u00a0health benefits.<\/p>\n<p>As prolific as <span style=\"color: #008000;\">zucchini<\/span> is both in our own gardens as well as the farmstands from which we purchase some of our produce, I suppose we could continue for the rest of the summer with recipes utilizing zucchini.\u00a0 Earlier this year, I posted a recipe for <a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/05\/13\/gluten-free-zucchini-muffins\/\" target=\"_blank\">Gluten Free <span style=\"color: #008000;\">Zucchini<\/span> Muffins<\/a>; check it out!<\/p>\n<p>Today\u2019s recipe is for <span style=\"color: #7bb04f;\"><strong>Ratatouille<\/strong><\/span>\u2014a yummy melange (mixture) of <span style=\"color: #008000;\">zucchini<\/span> and other seasonal veggies!\u00a0 <span style=\"color: #008000;\">Ratatouille<\/span> can be served hot, room temp (my favorite), or even cold.\u00a0 It can be a delicious side dish served with something yummy off the grill.\u00a0 It is a tasty alternative as a pizza topping, too.\u00a0 Our favorite way to enjoy <span style=\"color: #008000;\">Ratatouille<\/span> is as a vegetarian entree with the addition of fresh mozzarella pieces; oh yum!\u00a0\u00a0 And bread&#8230;don\u2019t forget some bread!\u00a0 A nice crusty baguette or loaf of Italian bread is great!\u00a0 This is also a dish which can be served\u2014and enjoyed by all\u2014when you have any combo of vegetarians, vegans, and meat eaters.<\/p>\n<p>And, of course, I would be remiss to fail to mention my favorite (yours, too?) <a href=\"http:\/\/www.pixar.com\/features_films\/RATATOUILLE\" target=\"_blank\">Ratatouille&#8230; <\/a>Actually, a little rat who yearned to be a French chef.\u00a0 Remember him?<\/p>\n<h2 style=\"text-align: center;\"><span style=\"color: #55aa58;\"><strong>Ratatouille<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-07-31-18.56.35-e1376252526628.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-13955\" alt=\"2013-07-31 18.56.35\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-07-31-18.56.35-e1376252526628.jpg\" width=\"336\" height=\"448\" \/><\/a><\/strong><\/span><\/h2>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<br \/>\n1\/4 cup olive oil, plus more as needed<br \/>\nKosher salt and ground lemon pepper*<br \/>\n1 medium-sized eggplant, cut into cubes<br \/>\n2 medium-sized zucchini, halved and cut into halfmoons<br \/>\n1 red pepper, cubed<br \/>\n1 yellow pepper, cubed<br \/>\n1 large sweet onion, chopped<br \/>\n8 ounces baby bella mushrooms, chopped<br \/>\n3-4 medium tomatoes, chopped<br \/>\n3 tablespoons chopped garlic<br \/>\n2 teaspoons chopped fresh thyme<br \/>\n1 stem fresh rosemary, pulled into sprigs<br \/>\n3 tablespoons good balsamic vinegar<br \/>\noptional: 8 ounce container of fresh mozzarella balls<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Directions<\/span><\/strong>:<br \/>\nHeat 2 tablespoons of olive oil in a large saute pan.\u00a0 Cook the vegetables, individually, (separately) for 5 or 6 minutes each, seasoning lightly with kosher salt and a few grinds of lemon pepper.\u00a0 Remove each and place into one large bowl to hold \u2018til remainder of veggies (eggplant, <span style=\"color: #008000;\">zucchini<\/span>, peppers, onion, mushrooms) are finished.
