We are continuing our series of summer recipes featuring in-season produce. Our featured ingredient(s) this week are <span style=\"color: #f26d0c;\">peaches<\/span> and <span style=\"color: #ef2e0f;\">cherries<\/span>!!!\u00a0 Here are a couple of links to the\u00a0 nutritional value along with some incredible health benefits \u00a0of these delicious fruits (<a href=\"http:\/\/www.nutrition-and-you.com\/peaches.html\" target=\"_blank\">peaches<\/a> and <a href=\"http:\/\/www.eatingwell.com\/nutrition_health\/nutrition_news_information\/cherry_nutrition_benefits\" target=\"_blank\">cherries<\/a>)\u2014besides the fact that they are just yummy!<\/p>\n<p>Nothing says summer to me more than the fruits that are available just during this season!\u00a0 My most favorite is <span style=\"color: #ef2e0f;\">cherries<\/span>; I just love <span style=\"color: #ef2e0f;\">cherries<\/span>!\u00a0 They are not in season for very long so indulge while you can!\u00a0 We are!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13800\" alt=\"2013-08-02 09.21.43\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.21.43.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3><strong>Summer Fruit Crisp<\/strong><\/h3>\n<p><em><span style=\"text-decoration: underline;\">Ingredients<\/span><\/em>:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13803\" alt=\"2013-08-02 09.52.20\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.52.20.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n3 large peaches, sliced<br \/>\n1 cup (18-20) <span style=\"color: #ef2e0f;\">cherries<\/span>, pitted* and halved<br \/>\n1\/2 cup raspberries (optional)<br \/>\n1\/4 cup plus 1 tablespoon sugar<br \/>\n1\/2 teaspoon almond extract<br \/>\n3\/4\u00a0\u00a0cup oats<br \/>\n3\/4 cup almond flour<br \/>\n1 teaspoon cinnamon<br \/>\n1\/2 teaspoon salt<br \/>\n6 tablespoons\u00a0cold butter, cut into cubes<\/p>\n<p><em><span style=\"text-decoration: underline;\">Directions<\/span><\/em>:<br \/>\nPreheat the oven to 375.<br \/>\nCube up the butter and place in refrigerator until ready for it.<br \/>\nIn a baking dish or pie plate, toss the cut-up fruit with 1 tablespoon of the sugar and the almond extract; set aside.<br \/>\nPlace the oats, 1\/4 cup sugar, almond flour, cinnamon and salt into the large bowl of a food processor.\u00a0 Pulse a couple of times to combine.\u00a0 Add the cold butter, pulsing just until it comes together and forms clumps.\u00a0 (Of course, you can mix this by hand, too!)<br \/>\nMound the oat mixture on top of the prepared fruit.<br \/>\nBake for 35 to 40 minutes.<br \/>\nServe warm or cold; a nice scoop of vanilla ice cream completes this!\u00a0 Enjoy!<\/p>\n<p>* \u00a0Here is how I pitted the <span style=\"color: #ef2e0f;\">cherries<\/span>\u2014with a drinking straw.\u00a0 Yes, ma\u2019am!\u00a0 <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13802\" alt=\"2013-08-02 09.01.35\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/08\/2013-08-02-09.01.35.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Now I am a girl who l-o-v-e-s her gadgets!\u00a0 And, of course, you can go out and buy a cherry pitter.\u00a0 But sometimes simple is the better answer.\u00a0 And besides, then one can save her pennies to buy an incredible kitchen tool!\u00a0 \ud83d\ude09\u00a0\u00a0\u00a0Just do it like\u00a0this:<br \/>\nRemove the stem from a <span style=\"color: #ef2e0f;\">cherry<\/span>.<br \/>\nPlace the end of the straw over the indentation of the <span style=\"color: #ef2e0f;\">cherry<\/span>.<br \/>\n<strong>Firmly, but gently<\/strong> wiggle the straw straight through the <span style=\"color: #ef2e0f;\">cherry<\/span>;
