{"id":13417,"date":"2013-07-22T01:00:56","date_gmt":"2013-07-22T05:00:56","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=13417"},"modified":"2013-07-19T13:48:39","modified_gmt":"2013-07-19T17:48:39","slug":"blueberry-frozen-dessert","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/07\/22\/blueberry-frozen-dessert\/","title":{"rendered":"Blueberry Frozen Dessert"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Mondays are always focused on <em>healthy but oh-so-yummy!<\/em> <span class=\"GINGER_SOFATWARE_correct\">recipes<\/span>.\u00a0 We continue our series of summer recipes featuring in-season ingredients.\u00a0 Our featured ingredient this week is <span style=\"color: #0000ff;\">blueberries<\/span>!\u00a0 Check out just some of the <a href=\"http:\/\/www.blueberrycouncil.org\/health-benefits-of-blueberries\/blueberry-nutrition\/\" target=\"_blank\">healthy benefits <\/a>of this tiny but powerful fruit!\u00a0 Today\u2019s recipe is for a <span style=\"color: #0000ff;\">blueberry<\/span> frozen dessert\u2014not <strong><em>quite<\/em><\/strong> ice cream but it fits perfectly into our \u2018healthy but oh-so-yummy\u2019 category!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-22.09.43.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13419\" alt=\"2013-07-18 22.09.43\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-22.09.43-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-22.09.43-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-22.09.43.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Here in the <span class=\"GINGER_SOFATWARE_correct\">NorthEast<\/span>, we are in the midst of berry season.\u00a0 <span style=\"color: #0000ff;\">Blueberries<\/span> are so plentiful that I have <span style=\"text-decoration: line-through;\"> six<\/span> four pints sitting in my refrigerator.\u00a0 A few weeks ago, we had a recipe for\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/2013\/07\/01\/blueberry-almond-muffins-gluten-free\/\" target=\"_blank\"><span style=\"color: #0000ff;\">Blueberry <span style=\"color: #000000;\">Almond<\/span><\/span><span style=\"color: #000000;\">\u00a0<\/span>Muffins<\/a>.\u00a0 But we are also in the midst of a <span class=\"GINGER_SOFATWARE_correct\">heatwave<\/span>; so I went looking for a recipe for a frozen treat to make for Robert.\u00a0 Oh, I found m-a-n-y recipes for <span style=\"color: #0000ff;\">blueberry<\/span> ice cream, sorbet, sherbert, and frozen smoothies&#8230;and they all looked so good!\u00a0 However, I really wanted to keep it light, simple, and <em>healthy but oh-so-yummy<\/em>!\u00a0 Over on Amy Green\u2019s website, <a href=\"http:\/\/simplysugarandglutenfree.com\/\" target=\"_blank\"><span class=\"GINGER_SOFATWARE_noSuggestion GINGER_SOFATWARE_correct\">simplysugarandglutenfree<\/span><\/a>, I found a quite easy recipe that I have tweaked just a bit.\u00a0 Enjoy!<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong>:<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-21.01.21.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-13420\" alt=\"2013-07-18 21.01.21\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-21.01.21-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-21.01.21-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-18-21.01.21.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1\/2 very ripe banana, cut into 1\/2&#8243; slices and frozen<br \/>\n1\/2 cup <span style=\"color: #0000ff;\">blueberries<\/span>, frozen<br \/>\n1\/2 cup ricotta<br \/>\n1 teaspoon maple syrup, or to taste<br \/>\n1\/2 teaspoon almond extract<\/p>\n<p><strong>Toppings<\/strong>:<br \/>\n1 tablespoon sliced almonds<br \/>\n1-2 dollops whipped cream<br \/>\nAdditional <span style=\"color: #0000ff;\">blueberries<\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Directions<\/strong><\/span>:<\/p>\n<ul>\n<li>First things first: if you haven\u2019t already&#8230;place the cut-up banana and <span style=\"color: #0000ff;\">blueberries<\/span> in the freezer for a couple of hours.<\/li>\n<li>Put the frozen fruit into the small bowl of a food processor or blender.
