{"id":13307,"date":"2013-07-15T01:00:54","date_gmt":"2013-07-15T05:00:54","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=13307"},"modified":"2013-07-13T10:26:12","modified_gmt":"2013-07-13T14:26:12","slug":"watermelon-arugula-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/07\/15\/watermelon-arugula-salad\/","title":{"rendered":"Watermelon &#8211; Arugula Salad"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Mondays are always focused on <em>healthy but oh-so-yummy<\/em>! recipes.\u00a0 Starting today we\u00a0are beginning a series on summer salads featuring in-season ingredients.\u00a0 Our featured ingredient is watermelon and today\u2019s recipe is for a <span style=\"color: #db0e27;\">Watermelon &#8211; Arugula &#8211; Feta Salad<\/span>.\u00a0This salad has such a range of flavors&#8212;citrusy vinaigrette, sweet watermelon, salty cheese, and peppery arugula&#8212;and it is\u00a0so refreshing!\u00a0 Almost everyone I know enjoys <span style=\"color: #db0e27;\">watermelon<\/span>&#8230;how about you?\u00a0 <span style=\"color: #db0e27;\">Watermelon<\/span> is available throughout the summer nationwide.\u00a0 In addition to being oh-so-yummy (a requirement here, y\u2019know!), <span style=\"color: #db0e27;\">watermelon<\/span> is loaded with <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&amp;dbid=31\" target=\"_blank\">healthy benefits<\/a>.\u00a0 This salad is a nice side dish to something on the grill&#8230;chicken, burgers, or fish.\u00a0 Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-10-18.36.29.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-13308\" alt=\"2013-07-10 18.36.29\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-10-18.36.29-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-10-18.36.29-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/07\/2013-07-10-18.36.29.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<blockquote><p><span style=\"text-decoration: underline;\"><em><strong>Ingredients<\/strong><\/em><\/span>:<\/p>\n<p><span style=\"text-decoration: underline;\">Vinaigrette<\/span>:<br \/>\n1\/4 cup grapefruit or orange juice<br \/>\n1\/4 cup freshly squeezed lemon juice (2 lemons)<br \/>\n1 tablespoon honey<br \/>\n1 teaspoon kosher salt<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n1\/2 cup good olive oil<\/p>\n<p><span style=\"text-decoration: underline;\">Salad<\/span>:<br \/>\n1\/4 cup finely diced vidalia onion<br \/>\n6 cups baby arugula<br \/>\n3-4 cups seedless <span style=\"color: #db0e27;\">watermelon<\/span>, (about 2# with rind)<br \/>\n8 ounces crumbled feta cheese<br \/>\n1 ounce pine nuts<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>Directions<\/strong><\/em><\/span>:<\/p>\n<p>For the vinaigrette: Pour all of the ingredients (except olive oil) into a bowl, and slowly whisk in the olive oil.\u00a0 Set aside.<\/p>\n<p>For the salad: Using a melon baller, scoop out <span style=\"color: #db0e27;\">watermelon<\/span> balls into a bowl.\u00a0 Place arugula and onion into a large salad bowl.
