{"id":12751,"date":"2013-06-28T00:01:24","date_gmt":"2013-06-28T04:01:24","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=12751"},"modified":"2013-06-27T22:59:53","modified_gmt":"2013-06-28T02:59:53","slug":"at-home-with-gch-curried-potato-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/06\/28\/at-home-with-gch-curried-potato-salad\/","title":{"rendered":"Curried Potato Salad"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/Curried-Potato-Salad.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-12775\" alt=\"Curried Potato Salad\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/Curried-Potato-Salad-1024x681.jpg\" width=\"491\" height=\"327\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/Curried-Potato-Salad-1024x681.jpg 1024w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/Curried-Potato-Salad-300x199.jpg 300w\" sizes=\"auto, (max-width: 491px) 100vw, 491px\" \/><\/a><\/p>\n<p>No matter what you think of Martha Stewart, you can&#8217;t argue that she doesn&#8217;t know what she&#8217;s doing in the kitchen. \u00a0Sometimes when I&#8217;m looking around for inspiration and new recipes, I come across something that I might be on the fence about. \u00a0Maybe it sounds unusual, or I don&#8217;t know if I can make it right, or sometimes the measurements or directions don&#8217;t seem correct.\u00a0 But when you make a Martha Stewart recipe, you know you&#8217;re going to end up with something pretty good. \u00a0And that&#8217;s what you get with this recipe for <strong>Curried Potato Salad<\/strong>!<\/p>\n<p>My husband bought me the <span style=\"text-decoration: underline;\">Martha Stewart Living<\/span> cookbook 12 years ago, and we&#8217;ve certainly gotten our money&#8217;s worth out of it. \u00a0This was one of the first recipes we made and it has become a family favorite &#8211; my Dad, in particular, requests it. \u00a0Every ingredient is easy to find in the grocery store, although you may have to look a little harder for cilantro and curry powder, depending on where you live. \u00a0Trust me (and Martha) &#8211; this recipe is a keeper!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Curried Potato Salad<\/strong><\/span><\/p>\n<p>(Recipe courtesy of <span style=\"text-decoration: underline;\">Martha Stewart Living)<\/span><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">3 pounds baby white potatoes, scrubbed (I&#8217;ve used red potatoes, too &#8211; just make sure they are small, and all the same size)<\/span><\/li>\n<li>1 tablespoon plus 1 teaspoon salt<\/li>\n<li>2 tablespoons white wine vinegar (I&#8217;ve used red wine vinegar too &#8211; it&#8217;s fine)<\/li>\n<li>5 large eggs<\/li>\n<li>1\/2 cup plus 2 tablespoons homemade mayonnaise, or from a jar<\/li>\n<li>3 tablespoons curry powder<\/li>\n<li>1 medium onion, very thinly sliced<\/li>\n<li>1\/4 cup fresh cilantro, finely chopped<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Place potatoes in a large pot with enough water to cover by several inches. \u00a0Bring to a boil over high heat, add 1 tablespoon salt, and reduce to a gentle boil. \u00a0Cook until potatoes are tender when pierced with a knife, 15 to 20 minutes. \u00a0Drain into a colander. Using gloves or paper towels to protect \u00a0your hands, cut potatoes into wedges while still hot. \u00a0Drizzle with vinegar, and set aside to cool.<\/span><\/li>\n<li>Place eggs in a small pan with enough water to cover by 1 inch, and place over medium-high heat. \u00a0When water comes to a boil, turn off heat, cover, and let stand for 13 minutes. Drain, and place in a bowl with cold water to cover.
