{"id":12676,"date":"2013-06-24T01:00:16","date_gmt":"2013-06-24T05:00:16","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=12676"},"modified":"2013-06-21T21:44:38","modified_gmt":"2013-06-22T01:44:38","slug":"gluten-free-graham-cracker","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/06\/24\/gluten-free-graham-cracker\/","title":{"rendered":"Gluten Free Graham Cracker"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Monday\u2019s are always focused on<em> healthy but oh-so-yummy<\/em>! recipes. \u00a0As promised, for the next few weeks we are going to prepare some gluten free treats that you can share at your bbq\u2019s, picnics, hoedowns, and block parties. \u00a0Today\u2019s recipe is for gluten free <span style=\"color: #993300;\">Graham Crackers<\/span>.\u00a0 Can you say &#8220;<span style=\"color: #993300;\">s\u2019<\/span><span style=\"color: #993366;\">mo<\/span><span style=\"color: #ff6600;\">res<\/span>?&#8221;<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/2013-06-21-18.44.45.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12699\" alt=\"2013-06-21 18.44.45\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/2013-06-21-18.44.45-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/2013-06-21-18.44.45-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/06\/2013-06-21-18.44.45.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<h3><span style=\"color: #993300;\"><strong>Gluten Free Graham Crackers*<\/strong><\/span><\/h3>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span>:<br \/>\n2+1\/4 cups gluten free flour mix (see below)<br \/>\n1\/3 cup packed brown sugar<br \/>\n2 teaspoons cinnamon<br \/>\n1 teaspoon gluten free baking powder<br \/>\n1\/2 teaspoon xanthan gum<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/2\u00a0 teaspoon salt<br \/>\n7 tablespoons COLD butter, margarine or shortening of your choice, cut into pieces<br \/>\n3 tablespoons cold water<br \/>\n3 tablespoons honey<br \/>\n1 teaspoon vanilla<\/p>\n<p><span style=\"text-decoration: underline;\">Topping Ingredients<\/span>:<br \/>\n1 teaspoon sugar<br \/>\n1 teaspoon cinnamon<\/p>\n<p><span style=\"text-decoration: underline;\">Directions<\/span>:<\/p>\n<ul>\n<li>Mix together the gluten free flour mix, brown sugar, cinnamon, baking powder, xanthan gum, baking soda and salt.<\/li>\n<li>Work COLD butter into dry ingredients using a pastry blender, fork, (or even your fingertips) \u2018till thoroughly crumbly and all butter is incorporated.<\/li>\n<li>Mix the cold water, honey, and vanilla together. \u00a0Add wet ingredients to the dry ingredients, mixing with a fork.\u00a0 If dough seems too dry, add a very little bit more cold water, just one teaspoon<em> at a time.<\/em><\/li>\n<li>Place dough onto a large piece of plastic wrap, gather up, and shape into a rectangle.\u00a0 Cover completely with plastic wrap and refrigerate for 30-60 minutes.<\/li>\n<li>Cut a piece of parchment paper to fit your baking sheet with a little overhang for &#8216;handles.&#8217;\u00a0 For ease of rolling, cut a gallon size zip-top bag open along the sides (leaving bottom seam intact) so that it now opens flat into one long sheet.\u00a0 Since it is a little thicker than plastic wrap, it will make rolling the dough out much easier!<\/li>\n<li>Place parchment paper on your countertop and, when dough is chilled, divide in half and place one half onto the parchment paper.\u00a0 Cover with the plastic bag and roll the dough out to about\u00a0 1\/4 inch thickness, or thinner&#8230;depending on how thick you like your graham crackers.<\/li>\n<li>Using the parchment paper, lift the rolled-out dough right onto the baking sheet.\u00a0 Lightly cut into 2 inch squares (a pizza cutter works well for this!).\u00a0 Prick lightly all over with a fork and sprinkle with a little of the cinnamon topping.\u00a0\u00a0 Chill for 10 minutes.<\/li>\n<li>Preheat oven to 325 while dough is chilling.<\/li>\n<li>Bake for 14-15 minutes or until they start to brown on the edges.\u00a0 Sprinkle with a small amount of the cinnamon sugar topping <strong>IMMEDIATELY<\/strong> after taking from oven.\u00a0 You might want to run the pizza cutter back over your cut marks while still warm and loosen them.
