\u00a0It sounded weird and unappetizing to me, but I humored him and made it anyway. \u00a0What was it? \u00a0<strong>Sweet Potato Pizzas<\/strong>!<\/p>\n<p>And boy am I glad I listened to him! \u00a0Whether you are craving pizza or just want a healthy, fun side dish, this is the way to go! \u00a0For the sweet potatoes, choose medium-sized ones that are not too skinny. \u00a0They should be about the size of your hand. \u00a0I recommend using Italian sausage, because the fennel seed adds a fantastic contrast to the sweet potato. \u00a0Use any toppings you like &#8211; kids love pepperoni! \u00a0In the summer, I microwave the sweet potatoes and then finish them in the toaster oven, but you can do the whole thing in your regular oven if you like.<\/p>\n<p>We eat these as a side dish, with a salad and baked chicken breasts. \u00a0Take a chance, like I did, and try this tonight!<\/p>\n<p><strong>Sweet Potato Pizzas<\/strong><\/p>\n<p>(Makes 2 servings)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">2 medium &#8212; large sweet potatoes<\/span><\/li>\n<li>1 cup tomato sauce, canned or homemade<\/li>\n<li>1\/2 pound ground Italian sausage<\/li>\n<li>1 cup shredded mozzarella cheese<\/li>\n<li>1 small can sliced black olives<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Wash the sweet potatoes. \u00a0Scrape off any eyes or weirdness on the outside, then poke several times with a fork. \u00a0Wrap in a slightly damp dish towel and microwave until done. \u00a0(My microwave takes about 6 &#8211;
