Everything else should be easy to procure. \u00a0These are best when they&#8217;ve had a chance to marinate for at least 2 hours, but don&#8217;t let the chicken marinate more than eight hours, or the chicken will start to break down.<\/p>\n<p>If you have any leftover skewers, these mildly spiced chicken bites make a fantastic salad! \u00a0Just chop them up and toss with salad greens, lots of cucumber, and red or yellow bell pepper. \u00a0Make the peanut sauce into a salad dressing by buzzing in a blender with a little water or more oil. Delightful!<\/p>\n<p><strong>Chicken Satay with Spicy Peanut Sauce<\/strong><\/p>\n<p>Ingredients:<\/p>\n<p>Chicken Satay:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">1 pound boneless, skinless chicken thighs<\/span><\/li>\n<li>1 cup plain yogurt<\/li>\n<li>1 teaspoon curry powder<\/li>\n<li>1 teaspoon fresh grated ginger (use powdered if you can&#8217;t find fresh)<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 tablespoon minced fresh cilantro<\/li>\n<li>juice from 1\/2 lemon or lime<\/li>\n<li>wooden skewers, soaked in water for 30 minutes, or use metal skewers<\/li>\n<\/ul>\n<p>Peanut Sauce:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">1\/2 cup chunky peanut butter<\/span><\/li>\n<li>1\/2 teaspoon soy sauce<\/li>\n<li>1 clove garlic<\/li>\n<li>3 tablespoon brown sugar<\/li>\n<li>1\/2 teaspoon minced ginger<\/li>\n<li>1\/2 teaspoon Sriracha or hot sauce of your choice<\/li>\n<li>juice from 1\/2 lemon or lime<\/li>\n<li>1 teaspoon coconut oil or olive oil<\/li>\n<li>optional: \u00a0a few dashes of nam pla (Thai fish sauce)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Slice the chicken thighs into 1&#8243;-wide strips<\/span><\/li>\n<li>Mix together the rest of the chicken satay ingredients and stir in the chicken. \u00a0Cover and refrigerate for two hours (or longer, up to 8 hours).<\/li>\n<li>While the chicken is marinating, make the Spicy Peanut Sauce. \u00a0Place all the ingredients in a blender or food processor and blend until smooth. \u00a0Refrigerate until ready to serve.<\/li>\n<li>When the grill is hot, thread the marinated chicken onto the skewers. \u00a0Grill for 5-8 minutes per side. \u00a0Serve with Spicy Peanut Sauce and more chopped cilantro.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Finally, summer is here!
