{"id":12137,"date":"2013-05-27T00:30:57","date_gmt":"2013-05-27T04:30:57","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=12137"},"modified":"2013-05-26T11:03:40","modified_gmt":"2013-05-26T15:03:40","slug":"gluten-free-chewy-chocolatey-gingery-cookies","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/05\/27\/gluten-free-chewy-chocolatey-gingery-cookies\/","title":{"rendered":"Gluten Free Chewy Chocolatey Gingery Cookies"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Monday\u2019s are always focused on <em>healthy but oh-so-yummy!<\/em> recipes.\u00a0 Today we have another cookie recipe!\u00a0 This recipe makes a delicious and not-so-sweet cookie which still fits into this category!\u00a0 Included in the recipe are healthy ingredients like sunflower and chia seeds, coconut oil instead of butter or shortening, and non-refined sweeteners.\u00a0 Also to note, these are flourless and grainless (as I know that is important to some of you).<\/p>\n<p>I am thinking this would make for a <em><span style=\"text-decoration: underline;\">great ice cream sandwich<\/span><\/em> with chocolate or caramel homemade ice cream!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-17.38.30.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12152\" alt=\"2013-05-25 17.38.30\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-17.38.30-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-17.38.30-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-17.38.30.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><strong>Chewy<span style=\"color: #8c542b;\"> Chocolately<\/span> <span style=\"color: #ff9900;\">Gingery<\/span> Cookies\u00a0\u00a0<\/strong><br \/>\n(makes approximately 3 dozen medium-sized cookies)<\/p>\n<p><strong><span style=\"text-decoration: underline;\">ingredients<\/span><\/strong>:<br \/>\n1+1\/2 cups sunflower seeds<br \/>\n1 cube crystallized ginger<br \/>\n2 tablespoons coconut oil<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-16.18.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-12153\" alt=\"2013-05-25 16.18.42\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-16.18.42-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-16.18.42-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-25-16.18.42.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n2 tablespoons honey or maple syrup<br \/>\n1 tablespoon chia seeds<br \/>\n3\/4 cup coconut sugar (or sugar of your choice)<br \/>\n3 tablespoons cocoa powder<br \/>\n1 teaspoon ground ginger<br \/>\n1\/2 teaspoon ground cinnamon<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/4 teaspoon kosher salt<br \/>\n1 large egg PLUS 1 egg yolk<\/p>\n<p><strong><span style=\"text-decoration: underline;\">directions<\/span><\/strong>:<\/p>\n<ul>\n<li>preheat oven to 350; line 2 baking sheets with parchment paper; fit a food processor with a mixing blade<\/li>\n<li>place sunflower seeds, crystallized ginger, coconut oil, honey, and chia seeds into the bowl of the food processor<\/li>\n<li>process for 2 minutes, stopping a few times as needed to scrape down the sides of the bowl \u2018til all is finely ground (the mixture will look like nut butter)<\/li>\n<li>add the coconut sugar, cocoa powder, ginger, cinnamon, baking soda, and salt;\u00a0 process \u2018til thoroughly combined<\/li>\n<li>keeping the food processor running, add the egg and egg yolk; and process just \u2018til dough forms<\/li>\n<li>using a <a href=\"http:\/\/www.walmart.com\/ip\/Farberware-All-Purpose-Small-Scoop\/15556046#Item+Description\" target=\"_blank\">small cookie scoop<\/a>, drop\u00a0dollops of dough onto the lined baking sheets about 2&#8243;apart (if doing by hand*, a small cookie scoop holds approximately 2 teaspoons of dough)<\/li>\n<li>bake for approximately 9-10 minutes \u2018til the cookies are<em> almost<\/em> firm to the touch; do not overbake<\/li>\n<li>remove from baking sheet and cool completely on a rack<\/li>\n<li>best stored in an airtight container; enjoy!<\/li>\n<\/ul>\n<p>* this is a sticky dough, as are most gluten free doughs.\u00a0 if rolling by hand, you might need to occasionally rinse your hands with cold water.<\/p>\n<p>*** I dusted mine with a little bit of powdered sugar.\u00a0 To make these an <strong>extra-special treat<\/strong>, melt \u00bd cup of chocolate chips in the microwave;
