{"id":12029,"date":"2013-05-29T01:01:10","date_gmt":"2013-05-29T05:01:10","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=12029"},"modified":"2013-05-28T22:05:31","modified_gmt":"2013-05-29T02:05:31","slug":"tamale-pie","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/05\/29\/tamale-pie\/","title":{"rendered":"Tamale Pie"},"content":{"rendered":"<p>I wanted to share a recipe by my friend <a href=\"https:\/\/www.facebook.com\/iRene.sonshine\">Irene Ladd<\/a>. \u00a0I haven&#8217;t tried this yet, but it looks delicious!!<\/p>\n<h2>TAMALE PIE<\/h2>\n<p><em>Ingredients:<\/em><\/p>\n<p>1 tablespoon olive oil<br \/>\n1 cup chopped yellow onion<br \/>\n2 cloves garlic, finely minced<br \/>\n1 1\/2 pounds lean shredded beef<br \/>\n1 (29 <span class=\"GINGER_SOFATWARE_correct\">ounce<\/span>) can tomato puree<br \/>\n1 small can of enchilada sauce<br \/>\n1 (15 <span class=\"GINGER_SOFATWARE_correct\">ounce<\/span>) can pinto beans, drained and rinsed<br \/>\n2 cups whole kernel corn (drained &amp; rinsed)<br \/>\n1 (4 <span class=\"GINGER_SOFATWARE_correct\">ouncez<\/span>) can diced green chilies<br \/>\n1 package of chili seasoning<br \/>\n4 ounces <span class=\"GINGER_SOFATWARE_correct\">shredded<\/span>\u00a0M<span class=\"GINGER_SOFATWARE_correct\">onterey<\/span>\u00a0Jack and Cheddar Cheese<\/p>\n<p><strong><br \/>\n<\/strong><em>Directions:<\/em><\/p>\n<p>Saute onions, and then add garlic last minute\u00a0in olive or coconut oil. \u00a0A<span class=\"GINGER_SOFATWARE_correct\">dd<\/span>\u00a0the shredded beef and reduce heat.<\/p>\n<p>Stir in tomato puree and enchilada sauce. \u00a0Simmer for 1 minute. \u00a0Add chili seasoning\u00a0package. Stir and simmer for about 10 minutes on low. \u00a0Add in beans, corn, and green chilies; simmer while preparing Tamale crust.<\/p>\n<h3><em>Tamale Crust<\/em><strong><\/strong><\/h3>\n<p><em>Ingredients:<\/em><\/p>\n<p>2 cups masa harina<\/p>\n<p>\u00bd cup salted butter, cold and diced into pieces<\/p>\n<p>1 teaspoon baking powder<\/p>\n<p>\u00bd teaspoon salt<\/p>\n<p>1 \u00bd cups hot water<\/p>\n<p><em>Directions:<\/em><\/p>\n<p>In a food processor or mixing bowl, mix together masa harina, baking soda, and salt; cut in butter. \u00a0The mixture will resemble coarse crumbs. \u00a0Stir in hot water.<\/p>\n<p>Divide mixture into 8 Ramekin cups and\u00a0add about 1\/2 cup of chili mixture; top with cheese and bake for 30 minutes at 350 degrees. \u00a0Top with chopped green onions, chopped cilantro, and sour cream.<\/p>\n<p style=\"text-align: center;\">*****<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I wanted to share a recipe by my friend Irene Ladd. \u00a0I haven&#8217;t tried this yet, but it looks delicious!!
