{"id":11966,"date":"2013-05-20T00:01:49","date_gmt":"2013-05-20T04:01:49","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=11966"},"modified":"2013-05-19T22:58:50","modified_gmt":"2013-05-20T02:58:50","slug":"italian-almond-cookies-gluten-free","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/05\/20\/italian-almond-cookies-gluten-free\/","title":{"rendered":"Italian Almond Cookies, Gluten-Free by Coleen Hayden"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH <\/strong>blog, Monday\u2019s are always focused on <em>healthy but oh-so-yummy!<\/em> recipes.\u00a0 Today\u2019s recipe makes a delicious, slightly decadent sweet which still fits into this category!\u00a0 This recipe has no\u00a0oil or butter, uses gluten-free almond flour which is high in protein, and can be made very successfully using alternative, unrefined sugars.<\/p>\n<p>These yummy little almond cookies are so reminiscent to me of Italian bakery cookies called \u2018amaretti.\u2019\u00a0 Going to make a confession here: I just l-o-v-e Italian bakery pastries!\u00a0 For my birthday, thank you but no birthday cake, please!\u00a0 Just a platter of mini pastry and almond cookies.\u00a0 For sure!\u00a0 So when my darling daughter, Kassia, called and told me that she had made \u2018amaretti\u2019 and they were gluten free\u2014happy me!\u00a0 Perhaps you will find these little cookies as delightful as I do; maybe even turn you into an amaretti fan!\u00a0 Enjoy!<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1567.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11967\" alt=\"IMG_1567\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1567-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1567-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1567.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><strong>Italian Almond Cookies\u00a0\u00a0\u00a0\u00a0\u00a0 <\/strong>makes approximately 3 dozen cookies<\/p>\n<p style=\"text-align: left;\"><span style=\"text-decoration: underline;\">Ingredients<\/span>:<br \/>\n2+1\/2 cups almond flour<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1563.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-11968\" alt=\"IMG_1563\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1563-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1563-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_1563.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1+1\/4 cups superfine* sugar<br \/>\n3 room temperature egg whites<br \/>\n1\/2 teaspoon vanilla extract<br \/>\n1 teaspoon almond extract<br \/>\nextra sugar for dusting<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Preheat oven to 300.\u00a0 Line 2 baking sheets with parchment paper.<\/p>\n<p>Using a food processor, blend together the almond flour and sugar for 30 seconds.\u00a0 Add both extracts, and pulse 5 or 6 times to blend.\u00a0 Add the egg whites ONE at a time, and continue to process the mixture \u2018til the dough is nice and smooth.<\/p>\n<p>Using a small cookie scoop, place teaspoons of the dough onto the lined cookie sheets, approximately 1&#8243;
