{"id":11778,"date":"2013-05-13T00:01:30","date_gmt":"2013-05-13T04:01:30","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=11778"},"modified":"2013-05-12T21:33:11","modified_gmt":"2013-05-13T01:33:11","slug":"gluten-free-zucchini-muffins","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/05\/13\/gluten-free-zucchini-muffins\/","title":{"rendered":"At Home with GCH: Gluten Free Zucchini Muffins"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Monday\u2019s are always focused on <strong><em>healthy but oh-so-yummy!<\/em><\/strong> recipes.\u00a0 Today\u2019s recipe fits into this category being it is low in fat (uses greek yogurt and a small amount of coconut oil or butter), is gluten-free (uses no grains) and is full of really good for you ingredients.<\/p>\n<p>Have you ever used crystallized ginger?\u00a0 If not, I would like to introduce you to it!\u00a0 I just love crystallized ginger, and always have some stored in a sealed container in the freezer.\u00a0 It is a great ingredient in many spicy foods.\u00a0 We especially enjoy it in Thai food!\u00a0 Try adding a bit to any baked goodies that have cinnamon, or nutmeg, in them.\u00a0 I buy mine in the grocery store; makes one dozen<\/p>\n<p><em><span style=\"text-decoration: underline;\">Topping Ingredients<\/span>:<\/em><br \/>\n1\/4 cup chopped almonds<br \/>\n1 tablespoon sugar (I use coconut sugar)<br \/>\n1 teaspoon cinnamon<br \/>\n2 tablespoons almond flour<br \/>\n2 tablespoons cold butter, cut into little cubes\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-10-11.09.39.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-11780\" alt=\"2013-05-10 11.09.39\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-10-11.09.39-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-10-11.09.39-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/2013-05-10-11.09.39.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><em><span style=\"text-decoration: underline;\">Muffin Ingredients<\/span>:<\/em><br \/>\n1\/2 cup sugar (I use coconut sugar)<br \/>\n3 eggs<br \/>\n3\/4 cup greek yogurt<br \/>\n1\/4 cup softened coconut oil<br \/>\n1+1\/2 cup shredded zucchini<br \/>\n1 teaspoon cinnamon<br \/>\n1\/8 teaspoon powdered ginger<br \/>\n1 cube crystallized ginger*, grated fine<br \/>\n1\/4 teaspoon nutmeg<br \/>\n1+1\/2 cup almond flour<br \/>\n1\/2 cup coconut flour<br \/>\n1 teaspoon baking powder<\/p>\n<ul>\n<li>Heat oven to 325<\/li>\n<li>Place muffin cup\u00a0papers\u00a0in muffin tin<\/li>\n<li>Make<strong> topping<\/strong>\u00a0first: mix all dry components of topping together; then drop in the cold\u00a0butter and quickly use your fingers to incorporate the butter &#8217;til crumbly.\u00a0 Set aside.<\/li>\n<li>In a medium-sized bowl, whisk together first 4 <strong>muffin<\/strong> ingredients until sugar is dissolved<\/li>\n<li>Add shredded zucchini (and crystallized ginger, if using) to the wet ingredients; stir well<\/li>\n<li>In a large bowl, mix together the flours, spices, and baking soda<\/li>\n<li>Add wet ingredients to the dry, mixing until incorporated<\/li>\n<li>Divide batter into muffin cups evenly<\/li>\n<li>Sprinkle on almond topping<\/li>\n<li>Bake for 30-35 minutes &#8217;til toothpick comes out clean<\/li>\n<\/ul>\n<p>*Here is where\u00a0you can\u00a0<a href=\"http:\/\/www.walmart.com\/ip\/Ka-Me-Sliced-Crystallized-Ginger-2.5-oz-Pack-of-12\/17197814 \" target=\"_blank\">buy crystallized ginger\u00a0<\/a>.\u00a0 I have bought this brand before;
