\u00a0I wanted to make a healthier version, so I adapted a recipe for a coconut flour cake, spruced up with orange zest, from\u00a0<a href=\"http:\/\/www.nourishingdays.com\">Nourishing Days<\/a>. \u00a0Add whipped cream and a basket of berries and you&#8217;re in business!<\/p>\n<p>&nbsp;<\/p>\n<p><em id=\"__mceDel\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/Strawberry-Shortcake-Cut.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11763\" alt=\"Strawberry Shortcake Cut\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/Strawberry-Shortcake-Cut-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/Strawberry-Shortcake-Cut-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/Strawberry-Shortcake-Cut-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n<strong>Strawberry Shortcake (Gluten-Free)<\/strong><\/em><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">12 eggs<\/span><\/li>\n<li>1\/2 cup coconut oil (or butter), softened<\/li>\n<li>1\/2 cup coconut milk (or regular milk)<\/li>\n<li>1\/4 cup honey (or more, if you like)<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>1 teaspoon grated orange zest<\/li>\n<li>2 tablespoon orange juice<\/li>\n<li>1 cup coconut flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 cup strawberries, sliced thin<\/li>\n<li>1 pint heavy whipping cream<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>optional &#8211; 1 or 2 teaspoons sugar (I didn&#8217;t use them, since my berries were really sweet. \u00a0If your strawberries aren&#8217;t as sweet as you&#8217;d like, add the sugar to the whipping cream)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">Preheat the oven to 350*F. \u00a0Grease two 8-inch round cake pans, and then cut a circle of parchment paper for the bottom of each pan, and grease that too. \u00a0(You can do this without parchment paper, but you will need to be really liberal with the coconut oil \/ butter \/ cooking spray on the bottom of the pan. \u00a0The cake stuck the first time I made it, so the next time I used parchment paper, and it was perfect!)<\/span><\/li>\n<li>In a very large bowl, using a stand mixer or a hand mixer, beat the eggs until frothy. \u00a0Beat in the softened coconut oil and milk, blending well. \u00a0Mix in the honey, vanilla, orange zest and orange juice. \u00a0Beat until foamy again.<\/li>\n<li>In a small bowl, stir together the coconut flour, baking powder and salt. \u00a0Then, a little at a time, blend the flour mixture into the egg mixture. \u00a0Mix well, making sure there are no lumps.<\/li>\n<li>Divide the batter between the two prepared pans and bake for 35-40 minutes. \u00a0When a toothpick comes out dry, remove from the oven and cool for ten minutes. \u00a0Remove from pans, and finish cooling on a rack.<\/li>\n<li>While the cake is cooling, place the beaters of your hand mixer and a metal mixing bowl in the freezer for half an hour. \u00a0Slice the strawberries and put back in the fridge until ready to use.<\/li>\n<li>When the beaters and bowl are very cold, beat the whipping cream with the vanilla (and optional sugar) until stiff peaks form. \u00a0To decorate: \u00a0spread a very thin layer of whipped cream on the top of one cake. \u00a0Make concentric circles of strawberry slices (use half the strawberries, saving the other half for the top), then cover with a thick layer of whipped cream. \u00a0Place the other cake on top of this, cover with the rest of the whipped cream and the rest of the strawberries. \u00a0Refrigerate until ready to serve.<\/li>\n<\/ol>\n<p>This is not a very sweet cake, since it relies on the berries for sweetness. \u00a0If your berries are not sweet enough for your taste, you can add more honey to the cake, and the optional sugar to the whipped cream.<\/p>\n<p><strong>Explore, experiment, enjoy!<\/strong>\u00a0\u2014 Dana<\/p>\n<hr \/>\n<p>To view even more of Dana\u2019s unique recipe, you can visit her at\u00a0<a href=\"http:\/\/frugalgirlmet.blogspot.com\/\">Frugal Girlmet<\/a>!<\/p>\n<hr \/>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Strawberry Shortcake is one of those comfort food recipes that everyone&#8217;s Mom or Grandmom makes a version of. \u00a0When Spring arrives and berries finally come to the store, what better way to dress up a plain old cake than with sweet, juicy fruit?
