{"id":11646,"date":"2013-05-06T00:01:09","date_gmt":"2013-05-06T04:01:09","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=11646"},"modified":"2013-05-05T09:53:06","modified_gmt":"2013-05-05T13:53:06","slug":"caprese-salad","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/05\/06\/caprese-salad\/","title":{"rendered":"At Home with GCH: Caprese Salad"},"content":{"rendered":"<p>Here on our <em>At Home with GCH<\/em> blog, Monday\u2019s are always focused on <em><strong>healthy but oh-so-yummy!<\/strong> <\/em>recipes.\u00a0 This week I am sharing a dish that I often prepare for gatherings&#8212;Caprese Salad, aka Fresh Mozzarella and Tomato Salad.\u00a0 Here we are thick in the season of bridal showers and graduation parties and Mother&#8217;s Day\u00a0 and Father&#8217;s Day celebrations.\u00a0 Today I made this for a bridal shower, and so\u00a0I multiplied the recipe 4X.\u00a0 It served over 40 ladies as a side dish on the salads table.\u00a0 If you are preparing this in advance, add the vinegar and olive oil just prior to serving.<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0222.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11648\" alt=\"IMG_0222\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0222-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0222-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0222-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>Caprese Salad<\/strong><\/p>\n<div>\n<p>8 ounces fresh mozzarella<br \/>\n1\/2 pint grape or cherry tomatoes<br \/>\nbasil * (fresh is best); if using dried, 1\/2-3\/4 teaspoon)<br \/>\nkosher salt, freshly ground black pepper<\/p>\n<p>2 tablespoons balsamic vinegar (I use &#8216;white&#8217; balsamic)<br \/>\n1-2 teaspoons extra-virgin olive oil<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0220.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11647\" alt=\"IMG_0220\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0220-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0220-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/05\/IMG_0220-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Easy-peasy!\u00a0 Depending on the size of the fresh mozzarella you have bought, you might need to cut the balls of mozzarella into small, bite-size pieces; halve the tomatoes, and sprinkle with salt and pepper, to taste.\u00a0 Thinly slice the basil*.\u00a0 Add the sliced basil to the seasoned tomatoes and cheese.\u00a0 Pour a small amount of olive oil and some of the balsamic vinegar over and gently mix. Taste; add more vinegar and olive oil, if necessary.\u00a0 Serve immediately.<\/p>\n<p>*tip: stack 3-4 basil leaves; tightly roll-up (like a tiny cigar!); then carefully slice into very thin slices.
