This week we are making <strong><span style=\"color: #33cccc;\">Gluten-free Cornbread Mini-Muffins<\/span><\/strong>.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0218.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11448\" alt=\"IMG_0218\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0218-300x200.jpg\" width=\"400\" height=\"300\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>They fit right into our <em>healthy but oh-so-yummy category<\/em> because they are:<\/p>\n<ul>\n<li>full of fiber<\/li>\n<li>low in sugar\u2014and non-refined sugar, at that!<\/li>\n<li>very low in fat<\/li>\n<li>gluten-free<\/li>\n<\/ul>\n<p>Last month, a few friends and I began a journey of reducing excess in our lives.\u00a0 The first area we tackled was food.\u00a0 Uh-huh&#8230;you read that right.\u00a0 So, right off the bat, sugar, flour, and caffeine were eliminated.\u00a0 (Can you say detox?\u00a0 We did&#8230;and it was good!)\u00a0 I learned many things over those four weeks one of which was that I knew that refined white sugar and wheat flour were permanently removed from our eating lifestyle.\u00a0 My husband, Robert, and I purged our pantry of all wheat: pasta, cake and cookie mixes, all-purpose wheat flour, crackers, snacks, cookies, and a few stray cans of condensed soup were even found and tossed!<\/p>\n<p>I had been dipping my toe into the gluten-free baking world for awhile.\u00a0 My daughter, Kassia,\u00a0 exclusively bakes with gluten-free flours and is a fantastic baker.\u00a0 She is my hands-on instructor in the field and has taught me so much!\u00a0 (Thank you, Kassia!!!\u00a0 Love you!)\u00a0 So, after purging the bad out&#8230;I found I had quite a few basics to get started with.\u00a0 For those of you considering doing the same, there are any number of really good websites to peruse and follow.\u00a0 At the bottom of this post, I have listed just a few of my favorites.\u00a0 These women all are quite knowledgeable, their recipes can be trusted, they are very skilled, and have been baking gluten-free for many years.\u00a0 Please consider trying a few of their recipes, and wandering around their websites where you can learn and experiment!\u00a0 Each of them also has tons of valuable information on how to set-up a gluten-free pantry, the types of flours and starches to buy (and why you should consider those particular products).<\/p>\n<p>You will probably be surprised to know that, to get started, you won\u2019t need to go out and spend tons of money&#8230;.\u00a0I would suggest buying a few products that are new to your pantry each week.\u00a0 Each of the ingredients that\u00a0I used in this recipe can be purchased at Super Wal-Mart, or Whole Foods, and probably at your favorite grocery store also.\u00a0 May I suggest, too, that you do not hesitate to purchase some of these products online;\u00a0I have and will continue to do so.<\/p>\n<p>So, here is this week\u2019s gluten-free recipe.\u00a0 We are having these with\u00a0my\u00a0<a title=\"Veggie Chili\" href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/26\/gch-whats-on-your-plate-butternut-squash-vegetarian-chili\/\" target=\"_blank\">Veggie Chili<\/a>&#8230;oh, yum!\u00a0 Enjoy!<\/p>\n<p><strong>Gluten-free Cornbread Mini-Muffins<\/strong>\u00a0\u00a0 (makes approximately 32-36)<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span>:\u00a0 <a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0212.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-11447\" alt=\"IMG_0212\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0212-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0212-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/IMG_0212-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><br \/>\n1 cup cornmeal<br \/>\n1\/2 cup millet flour<br \/>\n1\/2 cup tapioca flour\/starch<br \/>\n1 teaspoon xanthan gum<br \/>\n1 teaspoon psyllium husk (unflavored metamucil!)<br \/>\n3 tablespoons sugar, of your choice<br \/>\n1 tablespoon baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n2 large eggs<br \/>\n1 cup milk, of your choice<br \/>\n1\/4 cup melted butter, slightly cooled<\/p>\n<p>1 tablespoon sugar, to sprinkle (optional)<\/p>\n<p><span style=\"text-decoration: underline;\">Directions<\/span>:<br \/>\nPreheat oven to 425.\u00a0 Thoroughly grease mini-muffin pan (this recipe makes 30-36).\u00a0\u00a0 Melt butter; set aside to cool slightly.\u00a0 Combine dry ingredients; stir well.\u00a0 In a small bowl, whisk eggs; then add milk and melted butter.\u00a0 Whisk together \u2018til combined.\u00a0 Add wet ingredients to dry ingredients.\u00a0 Stir \u2018til smooth but don\u2019t overbeat.\u00a0 Fill muffin tins 2\/3 full.\u00a0 If desired, sprinkle a tiny bit of sugar over top of batter.\u00a0 Bake for 12-15 minutes, \u2018til just slightly browned and springs back when lightly touched with finger.\u00a0 Keep your eye on them;
