\u00a0Breakfast is the meal we should pay the most attention to, because it has the most dramatic affect on our bodies. \u00a0You haven&#8217;t eaten in ten or twelve hours, and your body is in need of fuel and nutrition! \u00a0Are you going to give it a danish and a mocha? \u00a0No! \u00a0That&#8217;s the worst breakfast you can have! \u00a0You&#8217;ll have an insulin spike, a sugar crash, and a deficit of the things your body wants: protein, a little fat, and slow-release carbs. \u00a0The best breakfast? \u00a0Eggs and vegetables.<\/p>\n<p>Please check out \u00a0Coleen&#8217;s recipe for a delicious <a href=\"http:\/\/girlfriendscoffeehour.com\/2012\/11\/04\/3446\/\">frittata<\/a>, or consider these two ideas: \u00a0<strong>Spinach Scramble,<\/strong> and, <strong>Kale and Sweet Potato Hash with Eggs<\/strong>. \u00a0A frittata can be made for dinner, with the leftovers reheated for breakfast; both the Spinach Scramble and Kale and Sweet Potato Hash can be made ahead of time, and reheated with eggs added at the end. \u00a0All of these breakfast ideas are great ways to start your day, with a big dose of protein, a little healthy fat (which helps your body absorb Vitamins A, D, E, and K) and slow-release carbohydrates to keep your energy levels stable. \u00a0Plus, if you make them the night before, you won&#8217;t have to think so hard in the morning. \u00a0And that&#8217;s a good thing!<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11428\" alt=\"Spinach Scramble with Pesto\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Spinach-Scramble-with-Pesto-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Spinach-Scramble-with-Pesto-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Spinach-Scramble-with-Pesto-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>Spinach Scramble<\/strong><\/p>\n<p>Ingredients (per person \/ per serving):<\/p>\n<ul>\n<li>1\/4 red or white onion, minced<\/li>\n<li>1 tablespoon butter<\/li>\n<li><span style=\"line-height: 13px;\">4 oz. frozen chopped spinach (from a one pound bag &#8211; just estimate a quarter of the bag)<\/span><\/li>\n<li>salt and pepper<\/li>\n<li>2 eggs<\/li>\n<li>optional: \u00a01 ounce cheese (I like feta or goat cheese), 1 tablespoon pesto, or 1\/2 an avocado<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">In a non-stick pan, add the minced onion and butter. \u00a0Over medium heat. stir and cook for 2 or 3 minutes until the onion turns translucent. \u00a0Add the frozen spinach, stir to combine, and cover with a lid. \u00a0Cook for 3 minutes. \u00a0Remove lid, stir again, and season with salt and pepper.<\/span><\/li>\n<li>In a small bowl, beat the two eggs, then add to the pan. \u00a0If you are using cheese, add it now. \u00a0Turn down the heat to medium-low and stir to scramble. \u00a0Cook for two or three minutes until done. \u00a0Serve with pesto or half an avocado, sliced, if you like. \u00a0Serve with sliced fruit.<\/li>\n<\/ol>\n<p>To make ahead: \u00a0Mince the whole onion, cook like in Step 1 with 2 tablespoons butter. \u00a0Add the whole bag of spinach, cover, and cook until done, about 4 or 5 minutes, stirring to break up any frozen clumps. \u00a0Hey, you just made four servings! \u00a0Put three-quarters of the pan away in the fridge, and eat one-quarter of the pan with the ingredients in Step 2. \u00a0Every day, scoop out a serving of spinach and onions, microwave for one minute until hot, then add to the pan and continue to Step 2.<\/p>\n<p><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Kale-Sweet-Potato-Hash.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11433\" alt=\"Kale Sweet Potato Hash\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Kale-Sweet-Potato-Hash-300x199.jpg\" width=\"300\" height=\"199\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Kale-Sweet-Potato-Hash-300x199.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/Kale-Sweet-Potato-Hash-1024x681.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Kale and Sweet Potato Hash with Eggs<\/strong><\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span style=\"line-height: 13px;\">2 sweet potatoes, peeled and chopped into 1\/2-inch cubes<\/span><\/li>\n<li>1\/2 red onion, minced fine<\/li>\n<li>2 tablespoons butter or coconut oil<\/li>\n<li>2 bunches kale, washed, ribs discarded, and torn into small pieces<\/li>\n<li>1\/2 teaspoon ground cumin<\/li>\n<li>1\/4 teaspoon smoked paprika<\/li>\n<li>salt and pepper<\/li>\n<li>2 eggs<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span style=\"line-height: 13px;\">In a large pan with a lid, cook the sweet potatoes and onion in the butter or coconut oil over medium heat. \u00a0After 5 minutes, add a few teaspoons of water and cover with the lid. \u00a0Stir every few minutes to make sure nothing sticks, adding more water if necessary. \u00a0(I&#8217;ve found sometimes I only need to add water once, and sometimes I need to add it again. \u00a0Not sure why, maybe some sweet potatoes are drier than others?) \u00a0<\/span><\/li>\n<li><span style=\"line-height: 13px;\">When you can break up a sweet potato chunk with a rubber spatula or wooden spoon, add the kale and spices. \u00a0If your kale is still wet from washing, carry on; if not, add another tablespoon of water. \u00a0Cover and cook for 3 minutes, then stir. \u00a0Continue to cook until the kale is tender, about 5 more minutes.<\/span><\/li>\n<li>You just made 5 servings!
