{"id":11323,"date":"2013-04-22T00:01:36","date_gmt":"2013-04-22T04:01:36","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=11323"},"modified":"2013-04-22T23:34:18","modified_gmt":"2013-04-23T03:34:18","slug":"at-home-with-gch-chicken-shepherds-pie-with-cauliflower-parmesan-topping","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/04\/22\/at-home-with-gch-chicken-shepherds-pie-with-cauliflower-parmesan-topping\/","title":{"rendered":"At Home with GCH: Chicken Shepherds Pie with Cauliflower &#8211; Parmesan Topping"},"content":{"rendered":"<p>Now that title\u2019s a mouthful, hmmm?\u00a0 Pun FULLY intended!\u00a0 My husband <em><strong>loves<\/strong><\/em> Shepherd\u2019s Pie\u2014and any variation I can come up with!\u00a0 And so I indulge him!\u00a0\u00a0 This recipe fits into our <em>healthy but oh-so-yummy<\/em> category in a couple of ways:<\/p>\n<ul>\n<li>it is low-carb (with the absence of mashed potato topping)<\/li>\n<li>it\u00a0 is made with natural ingredients that you can pronounce (as the gravy is made from scratch)<\/li>\n<li>it is low in fat\/high in protein (using boneless chicken breast as the protein and just 1\/3 cup of shredded cheese and 1\/3 cup Parmesan)<\/li>\n<\/ul>\n<p>This recipe could easily be doubled and baked in an 11 x 13 baking dish.<\/p>\n<p style=\"text-align: center;\"><strong>Chicken Shepherd\u2019s Pie with Parmesan-Cauliflower Topping<\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/2012-12-05-19.56.17.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11342\" alt=\"2012-12-05 19.56.17\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/2012-12-05-19.56.17-300x225.jpg\" width=\"300\" height=\"225\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/2012-12-05-19.56.17-300x225.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/2012-12-05-19.56.17.jpg 960w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><strong>Filling Ingredients:<\/strong><\/p>\n<p>1 sweet (vidalia-type) onion, chopped in pieces about 1\/2 inch<br \/>\n4 ounces baby bella mushrooms, wiped clean sliced chunky<br \/>\n2-3 tablespoons chopped garlic in oil (from a jar)<br \/>\n3+ teaspoons olive oil<br \/>\n1# boneless chicken breast, pounded flat, cut into 1&#8243; cubes<\/p>\n<p>1 tablespoon butter<br \/>\n2 tablespoons flour<br \/>\n1\/4 cup white wine (or broth)<br \/>\n1+1\/4 cups chicken broth<\/p>\n<p>1 bag frozen mixed vegetables (your choice) set out to defrost<\/p>\n<p><b>Topping Ingredients:<\/b><\/p>\n<p>1 medium-sized head of cauliflower, cored and chopped into small pieces<br \/>\n1\/4 cup milk<br \/>\n1\/3 cup finely grated parmesan cheese<br \/>\nsalt and freshly ground black pepper to taste<\/p>\n<p>1\/3 cup shredded cheese (sharp cheddar, smoked gouda) *use a flavorful cheese<\/p>\n<p><b>Instructions:<\/b><\/p>\n<p>Preheat the oven to 375.\u00a0 Bring a medium-sized pot of salted water to a boil. Chop cauliflower into small pieces and simmer \u2018til\u00a0 soft enough to mash easily (10-12 minutes). Drain cauliflower very well in a colander; place back into pot and\u00a0 use an immersion blender or hand beater to \u201cmash\u201d the cauliflower with the milk and Parmesan. Season very well with salt and pepper to taste.<\/p>\n<p>While the cauliflower cooks, heat 2 tablespoons of olive oil in a large frying pan and saute the cut-up chicken adding the chopped garlic for the last minute (don\u2019t let\u00a0the\u00a0garlic burn).\u00a0 Saute \u2019til just getting brown but don\u2019t overcook.\u00a0 Remove pan from stove; set aside cooked chicken.\u00a0 Wipe frying pan with paper towels to remove bits.
