{"id":11081,"date":"2013-04-12T00:30:56","date_gmt":"2013-04-12T04:30:56","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=11081"},"modified":"2013-04-11T23:27:54","modified_gmt":"2013-04-12T03:27:54","slug":"at-home-with-gch-coconut-flour-pancakes","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/04\/12\/at-home-with-gch-coconut-flour-pancakes\/","title":{"rendered":"At Home with GCH:  Coconut Flour Pancakes"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/coconut-flour-pancakes.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-11083\" alt=\"coconut flour pancakes\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/04\/coconut-flour-pancakes-300x199.jpg\" width=\"400\" height=\"300\" \/><\/a><\/p>\n<p>Through my gym, I am doing a Paleo Challenge.\u00a0\u00a0For 5 weeks I am cutting all processed foods out of my diet, as well as some other \u201cirritant\u201d foods, so no sugar, no grains, no legumes, no dairy, and no alcohol. \u00a0The goal is to eat the way our \u201ccaveman\u201d ancestors ate, with the belief that all the chemicals and lab-created foods we eat are not good for us, and that our bodies work the way they\u2019re supposed to when we only eat meat, vegetables, fruits, nuts, and fats (like olive oil, coconut oil, and avocado). \u00a0Just the way God created us!<\/p>\n<p>Does that mean that all the \u201cfun\u201d foods are off limits? \u00a0No! \u00a0No grains mean no flour, no oatmeal, no corn&#8212;and that takes a lot of American food off the table. \u00a0Coconut flour, to the rescue! \u00a0This is flour made from the dried and ground flesh of the coconut. \u00a0It\u2019s full of protein, has lots of fiber, is gluten-free, and is pretty all-around great for you. \u00a0It\u2019s much coarser than wheat flour, so when you make these pancakes, they won\u2019t be the cakey, smooth type you get at a diner. \u00a0These are more substantial, and they keep and reheat well. \u00a0The next day after I make them, I like to nibble on them, slathered in homemade almond butter. \u00a0Yum!<\/p>\n<p>Coconut flour can be found at Whole Foods, other health food stores, and online at Amazon. \u00a0I like Bob\u2019s Red Mill brand, but there are others out there too. \u00a0A one-pound bag will last you a while, so don\u2019t think you\u2019re getting cheated. \u00a0Just keep it in a Ziploc bag in your pantry, and stay tuned for more coconut flour recipes from me. \u00a0I\u2019m in love with the stuff, and I can\u2019t wait to share.<\/p>\n<p><strong>Coconut Flour Pancakes<\/strong><\/p>\n<p>(Recipe courtesy paleospirit.com)<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li><span class=\"Apple-style-span\" style=\"line-height: 13px;\">4 eggs, room temperature<\/span><\/li>\n<li>1 cup coconut milk (you can use regular milk too!)<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>1 tablespoon coconut nectar (or honey, or 1 packet of stevia)<\/li>\n<li>1\/2 cup coconut flour<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/4 teaspoon cinnamon (or pumpkin pie spice!)<\/li>\n<li>coconut oil for frying (you can use cooking spray to coat a non-stick pan, too)<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<ol>\n<li><span class=\"Apple-style-span\" style=\"line-height: 13px;\">Beat eggs in a stand mixer (or just whisk mightily!) until frothy. \u00a0Mix in milk, vanilla, and sweetener.<\/span><\/li>\n<li>In a small bowl combine coconut flour, baking soda, salt and cinnamon. \u00a0Mix together.<\/li>\n<li>Whisk flour mixture into egg mixture and blend well so there are no lumps.<\/li>\n<li>Grease pan with coconut oil (my favorite!) or, if you are a using a good non-stick pan, spray with cooking spray. \u00a0(Side note: \u00a0Trader Joe&#8217;s sells both coconut oil in a jar, and coconut oil cooking spray. \u00a0Love!) \u00a0When the pan is hot, use a large tablespoon to pour out pancakes. \u00a0I make mine about 4 inches in diameter. \u00a0These are thick, and you may need to smooth them out a bit. \u00a0Cook until dry on top, just like regular pancakes, about 2 or 3 minutes, then flip and cook for another minute or so. \u00a0Serve hot!<\/li>\n<\/ol>\n<p>This recipe makes 12-16 pancakes, depending on the size. \u00a0Store any leftovers in a Tupperware container in the fridge &#8211; they reheat nicely in the microwave, or eat them cold with nut butter, cream cheese, whatever you like. \u00a0My older daughter is a traditionalist and likes hers with butter and maple syrup. \u00a0My younger daughter likes her with fruit and maple syrup. \u00a0I \u00a0like them with sliced bananas, walnuts, and some flaked, unsweetened coconut on top &#8211;
