{"id":10681,"date":"2013-03-25T00:01:23","date_gmt":"2013-03-25T04:01:23","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=10681"},"modified":"2013-03-24T15:21:51","modified_gmt":"2013-03-24T19:21:51","slug":"at-home-with-gch-spring-salad-side-dishes","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/03\/25\/at-home-with-gch-spring-salad-side-dishes\/","title":{"rendered":"At Home with GCH: Spring Salad Side Dishes"},"content":{"rendered":"<p>Here on our <em><strong>At Home with GCH<\/strong><\/em> blog, Mondays are always focused on <em>healthy but oh-so-yummy!<\/em> recipes.\u00a0 This month we are spotlighting<strong> vegetarian<\/strong> dishes.\u00a0 Each Monday will actually be a Meatless Monday!<\/p>\n<p>So, I was talking with my dad about what to make for our family\u2019s get-together on Easter Sunday.\u00a0 Now, something you should know about us\u2014every event is a food event. \ud83d\ude09\u00a0 Is your family like that, too?\u00a0 My contributions this year will be for dinnertime.\u00a0 By request, I have been relegated the side dishes.\u00a0 Two of them will be\u00a0<strong>vegetarian<\/strong> salads: Broccoli-Craisin Salad and <em><strong>New<\/strong><\/em> Old-Fashioned Carrot Slaw.\u00a0 Both fit into our<em> healthy but-oh-so-yummy!<\/em> category nicely!\u00a0 Yes, there is a good amount of mayonnaise in the broccoli salad, but I think that you will find it balanced out by the rest of the healthy ingredients.\u00a0 Plus this recipe provides 6-8 servings.\u00a0 And in the carrot slaw, fat-free greek yogurt is substituted for the majority of the mayo that traditional \u2018old-fashioned\u2019 carrot slaw usually contains.\u00a0 Enjoy!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Broccoli-Craisin Salad<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0196.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-10685\" alt=\"IMG_0196\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0196-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0196-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0196-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/span><\/p>\n<p>dressing:<br \/>\n3\/4 cup good mayonnaise<br \/>\n3 tablespoons honey<br \/>\n3 tablespoons white balsamic vinegar (red wine vinegar also yummy)<br \/>\nfreshly ground pepper, to taste<\/p>\n<p>salad:<br \/>\n3 heads broccoli crowns, cut up into small florets &#8211; no stems<br \/>\n1\/2 cup finely chopped red onion<br \/>\n1\/2 cup sunflower kernels\/seeds<br \/>\n1 cup craisins (dried cranberries)<\/p>\n<p>Combine dressing ingredients in a small bowl.\u00a0 Mix together \u2018til emulsified;\u00a0 set aside.<\/p>\n<p>In a salad bowl, toss all salad ingredients \u2018til well distributed. Pour dressing over and stir \u2018til everything is nicely coated.\u00a0 Put completed salad into a storage container or bag and refrigerate for a minimum of 2 hours to meld the flavors together (overnight is optimum).<\/p>\n<p>Notes:<br \/>\nThe smaller you chop the florets, the nicer this salad will be.\u00a0 Takes a little time&#8230;but so worth it!\u00a0 I use less mayo than most recipes call for; feel free to add more if you desire.
