{"id":10311,"date":"2013-03-11T00:01:32","date_gmt":"2013-03-11T04:01:32","guid":{"rendered":"http:\/\/girlfriendscoffeehour.com\/?p=10311"},"modified":"2013-03-11T00:31:43","modified_gmt":"2013-03-11T04:31:43","slug":"at-home-with-gch-meatless-mondays-broccoligarlic-white-pizza","status":"publish","type":"post","link":"https:\/\/girlfriendscoffeehour.com\/wordpress\/2013\/03\/11\/at-home-with-gch-meatless-mondays-broccoligarlic-white-pizza\/","title":{"rendered":"At Home with GCH: Meatless Mondays &#8211; Broccoli &#038; Garlic White Pizza"},"content":{"rendered":"<p>Here on our <strong>At Home with GCH<\/strong> blog, Mondays are always focused on <em>healthy but oh-so-yummy!<\/em> recipes.\u00a0 This month we are spotlighting vegetarian dishes.\u00a0 Each Monday will actually be a Meatless Monday!<\/p>\n<p>One of my favorite veggies is <strong><em>BROCCOLI<\/em><\/strong>!\u00a0 What is your favorite way of preparing broccoli?\u00a0 Mine is simply steaming it!\u00a0 A pinch of salt and a grind or two of pepper&#8230;yummy!\u00a0 I have been known to forsake utensils and use my fingers to eat it, too.\u00a0<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0178.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-10312\" alt=\"IMG_0178\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0178-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0178-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0178-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>This week\u2019s recipe is for <strong>Broccoli-Garlic White Pizza<\/strong>&#8230;ever had it?\u00a0 Oh, I do l-o-v-e\u00a0 a yummy, tomato-y, cheesy traditional pizza\u2014but\u2014equally love pizza of this genre!\u00a0 This recipe fits our <em>healthy but oh so yummy!<\/em> category because 1) it has lots of healthy, no fat, few caloried, full of nutrition broccoli, 2) there is a tiny bit of olive oil on it, and 3) the calories contributed by the cheeses total approximately 850 for the whole pie!\u00a0 Now divide that by the 3-4 servings this pizza offers, and you\u2019ve got healthy&#8230;check!\u00a0 Yummy&#8230;check!<\/p>\n<p>Also you will see that I don\u2019t make my own dough&#8230;I stop by my favorite pizza shop and purchase 1 pound of their dough!\u00a0 (I already know how good it is!)\u00a0 And it only costs me&#8230;$1.\u00a0 Here\u2019s my only suggestion for baking your pizza: use a pizza stone.\u00a0 They are relatively inexpensive ($8-15 range, I would say) and can be bought in just about any big box store or kitchen goods store.\u00a0 Mine came from Pampered Chef.\u00a0 If not using a pizza stone, you will need a round pizza pan, or a large enough baking sheet to handle the size of your crust.<\/p>\n<p>OK!\u00a0 Here we go!\u00a0 <strong><em><span style=\"color: #800080;\">Pizza Pizza<\/span><\/em><\/strong>!<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Broccoli -Garlic White Pizza<\/strong><\/span> (serves 3-4)<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0174.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-10313\" alt=\"IMG_0174\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0174-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0174-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0174-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>1 (1#) package of pizza dough<br \/>\n2-3 tablespoons of flour to handle the dough<br \/>\n2-3 tablespoons of cornmeal<br \/>\n2 heads (no stems) of broccoli, chopped into florets (about 3 cups)<br \/>\n3+ tablespoons chopped garlic (I use the jarred variety)<br \/>\n15 ounce container of part-skim Ricotta cheese, let come to room temp<br \/>\n1+1\/2 cup shredded cheese (Mozzarella, Provolone, Monterey jack\u2014or a mixture)<br \/>\n3 tablespoons freshly grated Parmesan<br \/>\n1 tablespoon olive oil<br \/>\nsalt, freshly ground pepper, to taste<br \/>\nCrushed red pepper flakes (optional)<\/p>\n<p>Choose the pizza dough of your preference.\u00a0 If making from scratch&#8230;you better get going! If \u00a0purchased from your local pizza shop, you are set to go!<\/p>\n<p>If using a pizza stone, get it into the oven so that it can heat up!<\/p>\n<p>Preheat the oven to 500.<\/p>\n<p>Heat 2-3 cups water in a medium saucepan to boiling.\u00a0 While the water is coming to a boil, fill a medium-sized mixing bowl with very cold water and a few ice cubes; set aside.\u00a0 When the water in the saucepan comes to a boil, add the broccoli florets.\u00a0 Cook for just 3-4 minutes, no longer; watch carefully. When the broccoli is ready, it will still be bright green and still crisp. It is better for it to be undercooked than overcooked. Remove from the heat and drain. Then immediately place the cooked broccoli into the ice water to stop the cooking process; then drain again.\u00a0Blot the broccoli with a couple of paper towels. You don\u2019t want to add wet broccoli onto your pizza crust!\u00a0 Extra moisture = soggy crust!<\/p>\n<p>When you are ready to shape the dough, put a couple of tablespoons of flour onto a large cutting board (or your scrupulously clean countertop). Coat the dough ball with flour all around. Flatten the ball into a disc. Then with your fingertips, work your way around the edges, stretching it all out as you go. You can also put your fist in the middle of the growing circle and raise it off of the board, letting the sides stretch down. Then work your fingers around the edge of the circle one more time.\u00a0 I find it easier (safer) to keep my dough flat and just keep working it.*<\/p>\n<p>When your crust is ready, sprinkle a little cornmeal onto a large cookie sheet.\u00a0 You will use this to transfer the pizza onto the VERY HOT pizza stone.\u00a0 Carefully slide the formed pizza crust onto the cookie sheet.<\/p>\n<p>Spread the olive oil all over the pizza crust, even onto the rim.\u00a0 Use just the 1 tablespoon; remember, extra moisture = soggy crust!<\/p>\n<p>Add the ricotta onto the crust and using the back of a spoon, spread the ricotta evenly over the pizza. Then sprinkle the garlic all around. \u00a0Arrange the broccoli pieces over the surface evenly. Sprinkle with the Mozzarella and Parmesan. Season with salt and pepper.<\/p>\n<p>Bake 10-15 minutes. Watch carefully. If the cheese starts to brown too quickly (before the crust has had a chance to brown), reduce the heat\u00a0to 475 or so. When the cheese and the crust are just starting to brown, remove from the oven and let cool for 2 minutes. Then slice and serve immediately.<\/p>\n<p>Another veggie topping we like\u00a0on a white pizza is <strong><span style=\"text-decoration: underline;\">Caramelized Onions and Mushrooms.<\/span><\/strong><\/p>\n<p>Easy-peasy!<a href=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0177.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-10315\" alt=\"IMG_0177\" src=\"http:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0177-300x200.jpg\" width=\"300\" height=\"200\" srcset=\"https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0177-300x200.jpg 300w, https:\/\/girlfriendscoffeehour.com\/wordpress\/wp-content\/uploads\/2013\/03\/IMG_0177-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>2 tablespoons olive oil<br \/>\n\u00bd good sized onion, sliced thinly<br \/>\n6-7 medium to large Baby Bella mushrooms, cleaned and sliced<\/p>\n<p>Place a medium-sized saute pan on medium heat; add olive oil.
